Hello my friends! Today is
another healthy recipe for these warm days,
let’s make some delicious
Healthy, dairy free: iced popsicles
with berries
obviously you can make them with your favourite berries
I make them with blueberries and raspberries, if not
you can’t get the xanthan gum
just avoid it, or you can get it in the
supermarkets or by internet
you’ll neeed the regular coconut milk from the can, you don’t need to refrigerate it, let’s use the full can
You can also make them with Greek yogurt
so let’s see
how are these delicious iced popsicle are made! Let’s start!
we are going to need a full shaked regular coconut milk can
pour it in a pot with vanilla,
the low carb sweetener (in the box of
description you can see the sweeteners
which I usually use) and the salt mixing from time to time
leave it on medium heat
to simmer
approx. 8 mins remove from
fire and allow it to cool to
room temperature
meanwhile we will be creating the
jam, in a pan on fire
medium-high add the berries of your
preference, with the juice of half lime and
the sweetener gently crushing
until the fruit is cooked
then add a pinch of xanthan gum and
mix until lumps have
missing
and the mixture is thick
optionally strain it to remove the seeds.
repeat the same procedure with
any other fruit
fill the popsicles molds up to three
quarters with coconut milk and freeze
about 30 mins. take them out of
freezer and add 2 tsp of the
jam mixing gently with as you here
add more coconut milk
put the stick and freeze again
for another 2 or 3 hours
they have a light and very smooth taste to
coconut is not very intense it doesn’t feel
a lot but it has a slight aroma
when you get to the fruit in
combination with coconut does not come out
exquisite fruit is like
slightly bitter you can put more
sweetener if you are you can put
stevia; also right now is
It’s very hot and I feel more
fresh

    Hola Pily ♡ Que bella y tierna tu tacita donde pusiste la vainilla ♡♡♡ Pily que pasa si mezclo todo desde el inicio (la crema de coco y la fruta )varía el resultado????Pily, antes de estar en este estilo de vida si algo amo son las milanesas ….y creerás que extraño el no comerlas….me gustaria que me dieras una idea como hacer milanesas low carb o ceto
