2 Ingredient Coconut Clusters Recipe! Mind Over Munch


Computer Voice: Two Ingredient Takeover
Hi there and welcome to Mind Over Munch two ingredient takeover where I make
delicious recipes out of just two simple
ingredients. Today I’m making
my two ingredient chocolate coconut clusters. Computer ingredients.
Computer Voice: Hello. Today you will be using shredded coconut and chocolate.
Start by lining a
baking sheet with parchment paper and
pouring on a little bit of unsweetened shredded
coconut. Transfer to an oven
preheated at 350 degrees Fahrenheit for three to five minutes just long enough to lightly
toast. Set aside. Now it’s time to melt some
chocolate. You can either microwave it or
or use the double boiler method which
ever works best for you. And you
can use dairy free chocolate to make these absolutely
vegan. Thumbs up for vegan
chocolate. Once melted pour your toasted coconut
shreds into the chocolate and
mix well to combine. We don’t need sweetened
coconut because the chocolate
is going to add plenty of sweetness the coconut
is just there for delicious
nutritious texture. So far this recipe I am
using these little silicone molds
that I got online but you can use any molds
that you prefer. Use a spoon to
scoop your chocolate coconut mixture into
the molds. Place onto a tray and tap
it down to get out any of those air bubbles. Transfer to the refrigerator
for about four hours or overnight. Remove the
mold and devour. The perfect
satisfying sweet treat. Be sure to give this

    This looks delicious and so easy to make! I always use chocolate bars with 86 % cocoa for recipes like these. I have a hard time finding the right percentage of cocoa for the chocolate chips here in the Netherlands. What kind do you use?

    Ohhh, this reminded me of a chocolate I used to have sometimes as a kid growing up in Australia. They were called Golden Rough and were a flat disc shape wrapped in gold foil with red letters. Mmmm… I haven't had one for… decades! lol. I've been living in London for 10 years. Now I will make some for a taste of nostalgia 🙂

    I made something like this before seeing this video. I didn't mixed the two together but I made one layer of chocolate, a big layer of coconut flake in the middle, and then another layer of chocolate. But I might have to try your method. it seems easier.
