Avial Recipe | Mixed Veg Aviyal | South Indian Mix Vegetable Curry | Uttamam Sattvam


Aviyal is a South Indian traditional veggie curry made using seasonal vegs, basic spices, coconut & curd blend together 1 green chilli, 1/2 cup freshly grated coconut, 1/2 tsp cumin & 1 tsp gooseberry powder with very little water to fine paste gooseberries are of cool potency hence balancing the hot potency of curd preventing excess Pitta imbalance in the body & balancing all 3 Doshas added 2 cups water to boil over med heat added 1/2 tsp turmeric pwdr (I used whole bits, you can use pwdr) salt added 1/4 cup wedges of each of these veggies potatoes yam raw banana moringa drumsticks ash gourd / white pumpkin 6-8 cut beans (I used haricot beans) 4-5 curry leaves mixed & put to boil with lid on over med heat after 12-15 mins vegs are almost done added coconut paste & mixed cooked for 2-4 more mins without lid, till well done (not too mushy) & of thick consistency put off heat, added 2 tbsp of fresh curd & mixed well added tempering of about 2 tbsp coconut oil with 1/2 tsp mustard seeds & 5-6 curry leaves Aviyal is ready enjoy it with red/brown/par-boiled rice along with sambar, veg stir fries, pickles & papadom for generic ayurveda tips & more ( Instagram: @uttamam.sattvam )
