Bacon Wrapped Sausage Fatty – Keto / Carnivore

hey there it’s Steve from Serious Keto
and in this video we are gonna make a bacon wrapped sausage fatty but before
we do that if you enjoy low-carb cooking videos product and ingredient reviews as
well as lessons learned from my experiences with intermittent fasting
and the ketogenic lifestyle click that subscribe button right down there and
while you’re at it click the bell next to it so you’re notified every time I
release a new video if you have never had a bacon wrapped sausage fatty boy
are you in for a treat imagine a burrito but the burrito shell is sausage the
filling is pretty much whatever you want I’m gonna do this sort of like a
meatlovers pizza and then wrap the whole thing in a bacon weave do I have your
attention usually when I make this recipe I do it in a smoker but I know
that a lot more people have ovens and have smokers so I’m going to do it in
the oven this time if you want and you have a smoker do it in the smoker
roughly three hours at 250 degrees or til you hit an internal temperature of
170 degrees Fahrenheit but for this video like I said we’re gonna do it in
the stove to start we’ll squeeze out a 1 pound package of breakfast sausage into
a 1 gallon ziplock bag initially flatten this out by hand
making sure you work down into those corners then we’ll use a rolling pin to
get a nice uniform thickness square looking good next we’ll slice the bag
open along the two side seams and then gently peel back the top now we’ll start
filling our fatty you can use whatever ingredients you want we’re going to
start with some provolone make sure to leave a certain amount of space on the
end because that’s going to be our seam next we’ll throw it on some pepperoni some ham some pizza sauce or marinara sauce some
Italian beef some pepper rings some black olives some onion and some
mozzarella just for good measure I always fill these things way too full so
hopefully we can get it closed next I’m going to transfer this on to
some plastic wrap kind of pinch the ends just a little bit and we’ll wrap this
give it a spin to tighten up the ends and this will go into the fridge while
we create our bacon weave for our bacon weave again we have laid down a couple
of pieces of plastic wrap this just makes the whole folding and rolling a
lot easier you’re then going to lay down seven strips of bacon if you find you have some that are
fatter on one end than the other alternate fat and thin ends once you
have your seven strips out and lined up perfectly
remove the even-numbered strips so strip to strip for and strip six which we’re
going to put on the end right here then lay back down your even-numbered strips and now to make the weave we just
alternate odd and even we fold back the odd one three five seven laid on a strip and put our odd-numbered strips back
down now the even and continue until you have made your
complete weave now we’ll place our Fatih onto the bacon weave and roll that up tuck in the ends wrap it back up and then we’re gonna
leave this in the fridge for about an hour to tighten up finally we’ll hit our
fatty with a little bit of my sugar-free barbecue rub which I’ll link to in the
upper right corner of the screen and then we’ll transfer this seam side down
to a cookie sheet with a wire rack on it and into an oven set to 300 degrees
Fahrenheit now this is probably going to take in the area of two hours but
because the time to cook can vary depending on how much and what you’re
putting inside of it we’re gonna start checking it probably at about an hour
and a half with a probe thermometer to see if the internal temperature is 170
degrees it’s been about two hours and our instructor mama tur is at 178
well slide this back in and turn on the broiler to crisp up the bacon all right
let’s carve it up and serve it up how many pieces do you want Connor to
you want an end piece or no what about good stuff not drying all
really moist tastes like meat lovers Pizza yeah so Connor actually said that
he liked the baked sausage fatty more than the smoked sausage fatty because
this one we really kind of made to be like a meatlovers pizza and he said this
is a meatlovers pizza just without the crust so you can put whatever you want
in one of these you can smoke it you can bake it it is a keto and carnivore dream
come true so make yourself a fatty and thanks for watching

Not sure about this I’ll try it though. However What a Great Idea For Sausage! Pat it out, cook, slice for individual pieces then freeze or refrigerate for the week! Thank You ! Debra

That’s fancy and substantial, suitable for a holiday meal centerpiece. Wouldn’t this be fab for Christmas Eve?

  5. CthulhuSaves Posted on October 11, 2019 at 1:00 pm

This looks so good I'm not gonna tease you about "make yourself a fatty!" (And if you'd smoked it, that'd be "smoke yourself a fatty.") 🙂 Next time, though, make it with Ground Bork.

  6. Mary C Posted on October 11, 2019 at 1:01 pm

Now that is the type of meatloaf I would love.

  7. podunkpretties Posted on October 11, 2019 at 1:04 pm

If you lay your plastic wrap onto a damp counter top the plastic wrap will lay flat and stick to it as you build your meat roll.

So you got me thinking. What about a Thanksgiving one. I’m thinking ground turkey maybe with a stick of butter, then celery, onion, cranberries and apples. Wrapped in an Applewood smoked bacon. Happy Thanksgiving.

  12. Cuttooth's Room Posted on October 11, 2019 at 1:24 pm

My goodness this looks delicous! Like a meatzza sushi on steroids. Definitely goes on the "to make" list.

  13. James Van Hoose Posted on October 11, 2019 at 1:28 pm

Fridays are pizza night at my house. I've tried crustless, fathead, cloud, cauliflower and possibly a few more. Tonight I'm rolling a fatty! Thanks so much for this.

  15. Amanda LP Posted on October 11, 2019 at 1:32 pm

Okay, your hack of using the Ziploc bag to roll out the meat is Genius!! I hate rolling things out because it gets messy and out of shape and never even, so the bag looks so easy! (Does it work for fathead dough? Testing time!)

Good to know I'm not the only one snickering at 'smoking a fatty'! 😉 Those in the know will lose it if I say I'm going to make these at one of my mom's family dinners. 😄

  23. Hard Truth Posted on October 11, 2019 at 2:45 pm

These things are awesome! We used to smoke them for hand out snacks when we doing competition bbq.

If you are a bologna fan try cutting 2"long pucks from a whole log of good bologna. Cris cross score it with a knife and apply your favorite rub. Now smoke it at 250f for about 2-3 hours over your favorite wood, I like oak or hickory. This stuff is addictive!

  24. O K Posted on October 11, 2019 at 2:45 pm

    Oh, man. That looks fantastic!

  25. Katie's Korner Posted on October 11, 2019 at 2:46 pm

Whoa Brother Steve! Best thing I've seen in a looooong time! I love the Scotch eggs ( boiled eggs) idea too I saw in the comments. I would love to see that made into a video! I can't wait to make this. I grind my own sausage ( hot sweet Italian, breakfast, brat, something with a weird name I can't pronounce) this recipe will be awesome for me. I'm so sick of my food right now. I've done a pork butt in the oven just like a smoker I loved! Mustard, dry rub, spray it, low and slow. That was fabulous also. I thank you so much for this and really enjoy seeing your family. I loved the family meal. I have everything for this and am making it tonight! Thanks again! Go Pack Go!

  37. Patrick Powers Posted on October 11, 2019 at 5:27 pm

Do you think that would work with hamburger meat instead of sausage?

  38. Cj Lively Posted on October 11, 2019 at 5:46 pm

Wow…I bet Italian sausage on the outside would be great, too! Thank you!

  46. Patrick McGinnes Posted on October 11, 2019 at 9:59 pm

Remember when Epic Meal Time was like a huge controversy because of how much meat they were throwing in, and the fats, and stuff?

Turns out it's the sauce that was bad for you.

    Why someone hasn't made "Epic Keto Time" I don't know. Why haven't I? I don't have a budget. I'm broke.

  47. MisskittyAGcrafter Posted on October 11, 2019 at 10:53 pm

Could you do this in an air fryer?

  48. Marcelo Ribeiro Simões Posted on October 11, 2019 at 11:13 pm

  49. Wendy Dehart Posted on October 11, 2019 at 11:34 pm

  50. Space Case Posted on October 11, 2019 at 11:56 pm

  54. gayle crisp Posted on October 12, 2019 at 1:06 am

I never even heard of this dish. What an interesting concept. That was a work of art and it looked delicious. I don't know why, but the basket weaving sort of confused me. I think I would mess that part up ! lol

  55. Jim Greene Posted on October 12, 2019 at 2:39 am

I apologize if I am "Captain Oblivious", but I don't see the recipe for the sugar free BBQ dry rub you used, either in the comments here or on the recipe link

  60. Watching The Horizon Posted on October 12, 2019 at 9:15 am

    You have my attention…

  61. Anne Hughes Posted on October 12, 2019 at 10:24 am

This looks awesome! I'm going to try this as is asap because I know me and hubby will love it. I'm going to use it as a roast alternative too with a sage and onion stuffing because my son is still obsessed with pigs in blankets (in the UK they are just bacon wrapped sausages) and even now at 24 he'd rather have pigs in blankets than roast meat. Thank you so much for sharing this!

  62. Jim Greene Posted on October 12, 2019 at 11:12 am

one thing I really miss is Ham and Cheese on Rye…would it be as simple as adding caraway seeds to the chaffle mixture, or sprinkled on top before closing the lid, similar to the way I have seen others use everything bagel seasoning?…or is there something else needed to get that rye bread taste?…any chance you might take a stab at creating something like that?

  63. Keto MC Posted on October 12, 2019 at 2:56 pm

Great video! Looks yummy but I’m just not a big fan of sausage-it’s a texture thing. Could I use hamburger instead?

Very off topic but just wanted to say I got Birch Benders Keto Pancake & waffle mix at Walmart yesterday.

  64. TheCaptnChunk Posted on October 12, 2019 at 4:29 pm

I did this and it completely fell apart and was terrible. It stuck to the bag and didn't roll like yours. I was so excited and now I am depressed.

  65. Echo Delta Posted on October 12, 2019 at 7:45 pm

Holy moly. That's a serious recipe. The pun was totally intended.

  66. Tony N Posted on October 13, 2019 at 1:02 am

Just made this today, was fantastic, used Italian sausage as my meat of choice, basically making a pizza roll. Wife even liked it…lol

  67. Diana Rahdert Posted on October 13, 2019 at 4:01 am

  69. Ruth Bradley Posted on October 14, 2019 at 8:51 am

Oh my goodness! This is the stuff dreams are made of! I'm from England and get frustrated when certain ingredients are hard or impossible to get here without getting a second mortgage out but this…….this delight of magical meatery I CAN make! It has all my favourite things, meat, meat, meat, cheese, meat, meat, meat, onions marinara sauce and extra cheese and BACON! I never get hungry but this is making me drool! Best thing, even the carbonators in my home will love this as they love meat and cheese too! Not only is it a substantial and filling meal but be awesome for lunch boxes and picnics and is definately being added to my Christmas Eve menu and will make sure I can make another between boxing day (December 26th) and new year giving me new ways to use some turkey, or do two and serve one for New year's Eve! Thank you so much for this "Fatty" I need to go out and buy the ingredients and make it at the weekend:-) grateful thanks from Far North East England 🙂 XoxoxoxoxoxoX ps I'm so glad I found your channel, I LOVE it:-)

Would you consider doing a Thanksgiving themed series. I have company coming and I need some idea to stay Keto for a Thanksgiving meal!

  74. Richell Mcknight Posted on October 15, 2019 at 8:56 pm

This looks AMAZING!!!😁💖 If you do the pizza flavor stuffing, sweet Italian turkey sausage( straight or mixed with the other, or ground beef) would be really good in place of the breakfast sausage, mmmm! Just skin it out of the casing😉💖
