Welcome all! Papa G here. Today i present
Boom Boom Meatballs. I’ve taken my easy, low-carb, Italian meatball recipe and
transformed it into a wonderfully delicious, slightly spicy, totally awesome,
finger food delight. If you’re looking for a great low carb tailgate party or finger food recipe, look no further. Let’s get started. We’ll be using one pound each of loose Italian sausage and an 80/20 ground beef
mix. Remove the casings from the sausage and add to a large mixing bowl . Add our
ground beef and give a mix with your hands to fully combined. To our meat mix,
add some almond flour; some grated Parmesan cheese; chopped fresh parsley;
some chopped chives; a little minced garlic; salt; ground black pepper; a
generous amount of onion powder; some garlic powder; mustard powder; some
Italian seasoning; and just a little bit of cayenne pepper. Finish with one
lightly beaten egg. Mix well with your hands until everything is fully combined. Cover and place in the refrigerator for
at least 30 minutes. Lightly grease a 9 by 13 inch baking dish. Grab a small amount of meat mixture and
roll it into a ball about the size of a golf ball. Place in
our baking dish and repeat this step until all the meat is done. You’ll know
they’re the right size if you come out with 28 meatballs. Place in
the middle of a preheated 375°F oven for about 30 minutes or
until fully cooked. While our meatballs are cooking we’ll work on our sauce. To a
sauce pot on medium-high heat, add some water; some reduced sodium soy sauce; a
little apple cider vinegar; a brown sugar substitute; some minced garlic; a little
granulated stevia; and some red pepper flakes. Give a stir with a whisk to
combine. Gently sprinkle some xanthan gum and and continue mixing. When it begins to
simmer, reduce the heat to low and continue to cook and stir. You’ll see it
start to thicken. Remove from the heat once it reaches your desired thickness. When our meatballs are done remove them
from the oven. Transfer to a paper towel-lined plate to help drain some of
the excess grease. Now place the meatballs in a mixing bowl and pour half
of our sauce mix over the top. Give it a stir to completely coat. Plate a serving
of Meatballs; also add a little sauce to a small bowl for dipping. Garnish with
some chopped chives and enjoy one of the best low carb meatballs you’ll ever try.
