Welcome all! Papa G here. Today I present
a coconut macaroons. This low-carb treat is very easy to make and is perfect for
your next party, or when your low-carb diet wants something little sweet.
Let’s get started. Begin by adding one can of coconut milk to a sauce pot on
medium heat. Add a sugar substitute equal to 3/4 cups of regular sugar. stir with a
whisk to combine. Let come to a simmer and reduce the heat to medium-low. Add
some xanthan gum and mix again until the xanthan gum is fully incorporated. Continue to cook and stir until the mix
begins to take on more of a syrupy consistency. Remove from the heat and let
cool. Add just a bit of salt; a little almond extract; and some vanilla extract.
Give this a mix to combine. Here is where you can create your own recipe by adding
some other flavors like cinnamon, or add some food coloring for a festive holiday
dessert. To a large bowl, add 5 cups of unsweetened coconut flakes. Pour the
coconut milk in and mix to combine. Be sure that all of the coconut is fully
coated. Add 2 large egg whites to a separate mixing bowl. Add some cream of
tartar and beat this with an electric mixer until stiff peaks form. Add the
whipped egg whites to the coconut and gently fold and mix until fully
incorporated. Line a baking sheet with parchment paper and use a small cookie
scoop to place the coconut onto the sheet. This recipe makes about 54
macaroons so you’ll need to do these in a couple of batches. This next step is
optional, but I like to sprinkle a little extra sugar substitute over the tops.
Bake in the middle of a preheated 325°F oven for 24 to 28 minutes, or
until they become golden brown. Remove and let cool just a bit. Transfer to a
wire rack to cool completely. These macaroons are crispy on the outside and
soft and fluffy on the inside. There you have it folks! My version of coconut macaroons. A very easy to make low carb treat. I hope you
