Welcome to nishamadhulika.com Today we are preparing pakora with semolina , Which have unique taste than pakoras prepared with chickpea flour These pakoras taste delicious. making them is really easy. Let’s start with the procedure of making Semolina Pakora. Start with preparing the batter from semolina. Here we have 1 cup semolina and transfer it to a big mixing bowl. You can use finely or thick textured semolina. Add curd to the semolina, we have taken 3/4 cup whisked curd. Mix the semolina into curd. now add some water to it. We need batter with same consistency as like of batter prepared with chickpea flour. Keep the batterlittle thin as semolina puffs up. We sre done with making batter now let us mix veggies and spices to it. Here we have1/2 cup finely chopped bell peppers, 1/2 cup finely chopped cauliflower, 2 to 3 tbsp finely chopped green coriander, 1/2 inch ginger baton (finely chopped) , 2 to 3 green chili (finely chopped) . 3/4 tsp salt or to taste and mix everything really well. Batter appears little thick so add some water and keep aside for 5 minutes to set. 5 minutes are done and semolina has puffed up. now ad less than 1/4 tsp baking soda and mix well. Baking soda helps make the pakoras crispy and puffy. We have added few veggies to it like bell peppers and cauliflower. You can use any veggies as per your prefrence like spinack, finely chopped baby corns, cabbage or make these pakoras without any veggies. But veggies make the pakoras tastier. We are done with preparing the batter, and for making this much batter we have used more thsn half cup of water. Heat enough oil for frying the pakoras. Check if the oil is sufficiently hot. Bring your hand over the wok and you will feel the warmth. Oil is rightly hot. We need nicely heated oil for frying the pakoras. Drop one pakora first to check. It is frying well, oil is rightly hot, now add remainging pakoras to the wok for frying. You can keep the size of akoras big or small as per preference. When the oil is once heated well, bring the flame to medium. Pakoras have turned slightly brown from beneath, flip the sides and continue frying until they get golden brown in color from all sides Pakoras have turned golden brown , drain them out. Hold the ladle on the edge of the wok like this so that excess oil drains back to the wok. Place the fried pakoras over a plate. Similarly fry remaining pakoras as well. We are done with frying the pakoras and it takes 4 to 5 minutes for frying pakoras at once. This much quantity of pakoras is sufficient for 2 to 4 members. Steaming hot , crispy and lip smacking semolina pakoras are ready. MAking these tempting fritters is really easy. Just keep note of few things , While making the batter make sure you keep it a little thick. Don’t make it too thin in consistency. These pakoras gets cooked so instantly that any sudden guests at your home can be served with these pakoras quickly. In fact you can prepare these pakoras for supper and serve steaming hot Serve these pakorasd with green coriander chutney, tomato sauce or any other sauce as per your preference.
