I feel like I’m gonna be doing most of these vlogmases
in my pajamas.
Today, I’m attempting to make keto pancakes
for the first time.
I don’t know what I’m doing,
but I found a recipe on delish.com,
and I’m gonna follow that.
It says I need to use almond flour
But I think I’m gonna use half almond flour,
half coconut flour
because I heard that creates a nice little texture and flavor.
I’m a little worried about this,
but we’re just gonna try it.
I think I’m already screwing this up by deciding to do
almond flour AND coconut flour.
We will see.
VK is making cheesecake,
or, keto cheesecake today, so I’m gonna try that later.
Let’s see how this goes.
Michael says he has his omelet on standby.
That doesn’t sound very supportive, Michael.
How many pancakes does this make?
I’m not THAT hungry.
You need four ounces of cream cheese. This is eight.
I’m just gonna use half –
How do you measure ounces if you don’t –
Like, I’m used to measuring in cups,
or teaspoons, or tablespoons.
How do you measure ounces, you know?
Well, this is – This whole thing is 8 ounces.
So I guess I’ll just use half of it.
I’m using half of this, huh?
I love me some cream cheese.
I accidentally over-bought cream cheese.
I don’t know how I did that.
But so, now I’m trying to make as many
recipes as I can with cream cheese
But Michael is making fun of me.
I always buy stuff and then find, like, an unopened jar
in the pantry or the refrigerator.
Now I need four large eggs.
Okay, now I need lemon zest,
which, I don’t have
one of those thingamajiggers,
nor do I have a lemon, so
So I don’t have a lemon, and even if I had a lemon,
I don’t have a zester, or, I don’t know what you call that.
I’ve never actually done that before.
Now watch, I’m gonna get like 50 comments
with people telling me how to zest the lemon.
But it says there’s like a conversion
“What can you use if you don’t have lemon zest?”
You can replace each teaspoon of lemon zest
with a half a teaspoon of lemon extract or lemon juice.
Both of which I do have.
What did it say? Half a teaspoon?
Yeah, half a teaspoon.
Good thing I have a lot of lemon extract because
there’s another desert I make often
involving lemon extract,
so I have plenty of it on hand.
Felicity’s feeling a little better.
She’s still kind of under the weather, but

And I’m like, “I really don’t.”

I mean I can cook basic things,
but I don’t – I’m not really a cook.
But I know hacks.
So I can have a cooking HACK show,
but not like, a cooking show.

They say you always mess up the first pancake,
so I’m planning on this looking terrible.

Choc Zero sugar-free syrup
I got – I found this – I was searching for those
Lily chocolate bars, and then this popped in as,
“So we also recommend,
we think you might like this, too.”
All right, we’re gonna try it.
Wait, you’re not doing syrup?
I am, but I always cut mine first,
and then I put syrup on there, cause
then I’m really syrup-y the few bites, and I’m not
Yeah, I’m not soggy-ing it up.
Okay, Michael’s the real taste tester because uh
He loves pancakes, like real pancakes.
It’s true, it’s true.
I’m curious what he thinks.
So my first thought is
it’s unlike a pancake that’s fluffy and cake-like.
This is more cornbread-like.
Yeah, it does look – it has the consistency of cornbread.
Or at least that’s how it looks.
But that’s my first impression.
And it’s yellow.
Like, how can they get maple syrup out of a maple tree without sugar?
You left a little drip.

Here we go, keto pancake.
Am I gonna go when you go?

I like it.
[Felicity] I don’t know if Michael likes it.
I can definitely taste the lemon.
And the coconut.
I would use vanilla extract next time instead of lemon
I mean almond’s good, but I think vanilla extract would be better
And I definitely taste the coconut, too.
And the hints of the lemon.

– What about texture?
Cornbread. I still think cornbread.
Definitely more like cornbread.
I will say that, I think if you use vanilla
and then sprinkle cinnamon
Are you allowed to do that? Is that keto?
I don’t know.
I think they’ll taste almost identical
to normal pancakes.
Would you –
I don’t notice any difference in the syrup.
No, the syrup’s great. This tastes the same.
Well, now I’m wondering if I should use all almond flour
or the mix of almond and coconut
because the coconut makes it a little sweeter.
Maybe, it’s almost a little overbearing on the coconut.
I taste more lemon than coconut.
I think you’re tasting lemon.
– But overall, it’s good stuff
– Not bad
It’s definitely more egg-y
than normal pancakes.
I don’t notice that at all.
I don’t know if I’d eat this without syrup.
Like, normal pancakes you can eat without syrup
but this kind of needs it.
Otherwise, it’s like eating –
It’s really dry.
Yeah, it’s very dry.
Continuing in our quest to find
Keto foods that we like and that taste great,
I would give these keto pancakes a
Yeah, the chocolate’s an A,
then these are just under the chocolates.

So the kids wouldn’t give this five stars,
but I think if you’re trying to eat
a Ketogenic diet
or just kind of cut down on your carbs and gluten,
this is a great alternative.
