There are so many beneficial compounds and micronutrients in veggies. And cancer fighting compounds as well. So plants are both good and bad. Surely we adapt to the anti-nutrients. Otherwise vegans and vegetarians would be dropping dead or rushed to the hospital on a regular basis.
I think everything shown here is true but is only half the story. Otherwise why would we also have studies that show the health benefits of vegetable consumption. And people that eat lots of vegetables seem very healthy.

Have we overcomplicated nutrition? My grandparents and their parents never followed a restricted diet and ate what was in season. Processed food was not an option. I've been a full carnivore for 10 months and love it! But I'm starting to realise my body doesn't. Yes, it's all been grass-fed and I eat loads of fat and organs, as I said 'I love it!' However, the more I think about my ancestors and the more I have read and learnt about the gut microbe the more I realise we need to be feeding them as well, they need prebiotics, which unfortunately we don't get from meat. Studies have shown the less diversity in ones diet the less diversity in their gut! Yes, you can argue that diversity is there to deal with the diversity in your diet and if you just ate meat you have no need for the diversity, this is how I use to think. But, our bacteria do so much for us it stands to reason we need to nourish them so they can flourish, the healthier the person the larger the diversity of their gut bacteria. Since going carnivore my Psoriasis is noticeably worse and I now have histamine intolerance both of which are, or can be, contributed to gut dysbiosis. Would love to hear others thoughts on this subject.

I found Dr. Mason's presentation rather alarmist and unprofessional, as no list of references were given and the ones at the bottom of the screen were very difficult to make out. He warns against so many categories of food and provides so few practical solutions, and he admitted within the talk that some of the study results did not reach statistical significance. He did not indicate which studies were in vitro, in vivo, (non-human animal) or in humans. His smooth presentation style seems to have impressed a number of commentors below, who seem naive about medical and biological research and easily wowed by a polished but for me an unusable presentation. I think in front of sophisticated nutrition research people, a lot of critical questions would have followed the talk, and he wouldn't look so polished after stumbling through those. I shall do my own research of the medical literature on lectins now, having wasted an hour with this guy.

A container of cream should contain just CREAM. Thankfully, in many parts of the USA, we can get unprocessed milk and cream directly from the farms. We look for farms milking Jerseys or other heritage breeds that produce high butterfat and solids-not-fat in their milk, like Devons. The cream we are getting now is so thick that, once chilled, you have to scoop it out of the glass jar with a spoon.
100% grassfed, and 'beyond organic'. We are truly blessed.
On the A1 and A2 milks, and milk in general possibly triggering inflammation in some people… were those studies done on unprocessed or processed milk? Does anyone here know? In the USA, milks sold in supermarkets is highly processed, and like all industrially produced and industrially processed foods, should be avoided.
Raw milk is very different from the processed stuff. The colostrum Dr. Mason mentioned as having had a clearly protective effect on the gut is one example. Colostrum is milk, the first milk after the calf arrives, and cannot be pasteurized (it turns to pudding if heated). Though at much lower levels, raw milk contains immunoglolbulins and those growth factors mentioned.

Among the other damage caused to milk by processing:– Vitamin content is greatly reduced or eliminated. Raw milk contains all the vitamins that most any mammal needs to thrive, all the known vitamins. Dr. Manson mentioned a couple chemicals of concern that are readily transferred from plastic or plastic-lined containers (like 'wax' cartons) to the food or beverages they contain – including milk. Raw milk is usually sold in reusable glass containers.
Producing raw milk for sale, though legal in most US States is bucking the current, and therefore usually done only by those with a passion for orchestrating the relationship between cattle, the pasture plants, the soil life, sunlight and rain.
Fewer and fewer dairy cows in the USA ever have access to pasture. They are being convinced by the marketers of chemicals and machinery that is it more 'efficient' to keep the cows inside 24/7 – and use fossil fuels, chemicals and machines to grow feed and store it an bring it to the cows, and then store and haul the manure out to the fields (often after much of its value has been damaged by anaerobic storage conditions) – than it is the let the cows harvest their own food from pastures and fertilize it as they go.
And I may be overlooking a few things. When talking about milk that is industirally processed compared to milk that is in the natural state, that is like comparing pink slime to real meat. Ad there may be even more difference between unprocessed and processed milk.
Of course this does not include traditional 'processing' like the making of yogurt, kefir, cheeses and other traditional foods made from milk.
BTW – It is interesting to note that milk produced under organic standards contains significantly more Omega 3 fatty acids than the milk from 'modern' conventional dairy farms and CAFO diary 'farms'. The milk of a 100% grassfed Jersey herd was found to have 7 TIMES more Omega 3s than the organic but not 100% 'grassfed' herds. The link above also documents the favorable Omega 3 to Omega 6 ratio in 'grassmilk'.
I am not in any way involved with dairying or the dairy industry. Like many people in North America, Europe, Africa, the Middle East, the reindeer herders of the far north, etc my ancestors thrived in large part due to the mutually beneficial relationship they had with their dairy animals. Hmm… while I love what Dr Mason does I have to say that the image showed at 5:53 of the endometrium with lectins attached to it is misleading. That paper is about a group of fertile and infertile women. Lectins were able to attach to the endometrium of the fertile women while they didn't in the infertile ones. The experiment was carried out IN VITRO NOT IN VIVO, they took a biopsy of the endometrium and in a petry dish they added the lectins. Lectins are used in research for other purposes, they are actually pretty useful to target certain molecules. In this case they think that infertility comes from a carbohydrate that is defective or something in the endometrium of infertile women and that's why lectins don't attach to it.
Lectins are vastly overrated. Look into hormesis; lectins as well as other plant toxins make you stronger. Especially if you have a fasting focused lifestyle (never more than one meal a day with occasional periods of 48-72 hours of fasting). Literally every single thing people like this guy try to claim is bad about plants is solved through fasting and a balanced diet of meat and plants.
3 things I've been eating that have me concerned; sugar-free peanut butter, pinto beans(soaked ovenight and cooked several hours) and tomato(crushed, canned). I feel like I'm running out of foods I can eat. Besides this, some onions and cabbage are the only carbs I eat. Hopefully that would mitigate the negative effects of lectins.(some cucumber. eggplant)

As a vegan on a high starch diet (carbs), I am losing weight, do not need or take medication.I am careful to eat seeds or beans that are sprouted or cooked. I avoid processed food. Almost 60 now.I recently found out I ate too much oil, which is why I am losing weight now (by choice)
