I would recommend don't use olive oil it flavor is too hard, you have to use an oil without flavour, vegetal oil is the best even not being healthy as olive, and put a lot of garlic and onion, and one part of aplee vinegar or avocado vinegar.

I have no doubt Ramsey is a great chef …………HOWEVER he could not be more off on the chimichurri. It's not that complicated a mix. Garlic, Parsley, Oil, S&P for taste. If you wanna get crazy mince some red onion. Again ….great chef , steaks looks amazing …….wrong on the chimichurri.

I have been cooking skirt steaks for over 20 years, I guess its about the right cooking time… Which he mastered! He cooked rare and let it rest I usually cook it closer to medium and cut it diagonally. Remember its about technique and practice! Enjoy and thanks Gordon…. That is not chimichurri. You do not put coriander/cilantro and mint in chimichurri ever. I can forgive the lemon zest and juice with olive oil, but the other two greens are way too strong that they change the flavor completely. Call it whatever you like, but not chimichurri. Parsley shoukd always be the dominant green in chimichurri, and it needs oregano too. I thought Gordon Ramsey was a professional chef with a culinary background, and a Michellin 3 star restaurant. I guess this just goes to show, not even the most educated of people know every dish in the world.
