How to Cook Tortang Giniling na Baboy (Ground Pork Omelet)


Welcome to Panlasang Pinoy. I am Vanjo Merano. Today we will be cooking “Tortang Giniling” (Ground Pork Omelette). As for this recipe, we will be cooking the “giniling” (ground pork) from scratch. But you may also cook this recipe using leftover ground pork, beef or chicken. These are the ingredients that we will be using for this recipe. This is the “giniling na baboy” or ground pork. We will also be needing bell peppers. Red and green bell peppers are what we are using in here. We will also be using green peas. These are the frozen green peas but you may also use canned peas. We will just discard the water from it. We will be needing eggs, 6 of it is what we are going to use but you may add more it if you would prefer to. This is the onion. Riped tomatoes. We will also be needing garlic which we need to chop. We also need ground black pepper and salt. Aside from these ingredients, we will also be using a cooking oil. Since my love for all of you is great, here is the complete list of the ingredients together with their respective quantities. We are really trying to include this format in our new videos but you may also visit PanlasangPinoy.com for you to view the complete recipe of this and all different recipes. If you are now ready, let us now start cooking. We will be needing to saute the garlic, onion and tomatoes. That is why we will be heating a cooking oil here in a cooking pot. We will just distribute the oil into the pot then we can now add the onion. This is the yellow onion that we will be using. You may use red or white onion in here but just make sure to chop it. We will just be cooking it for about 30 seconds. After that, we can now add the garlic. I have just choppped this garlic and it would be okay if we will not crushed it anymore. But it is much better if we would crush it for its flavor to really come out. We will just cook it for about 20 seconds then we can now add the tomatoes. This is now our riped tomatoes that we have sliced into cubes. These 3 ingredients are the only ingredients that we will be needing to saute. What we will do now is to just continue sauteing it and same as before, we will saute it until the tomatoes and onion would completely soften. At this moment, it is now ready. We can now add here the ground pork. As for the ground pork, we just need to cook it until its color turns into medium brown. For those of you who are new to cooking ground pork, what we usually do is to let it stay in the pan and wait for it to be cooked. But what I would like to suggest is, while we are cooking the ground pork, we just need to separate it from each other just like what I am doing. Because when we do not separate it, there’s a tendency that the ground pork would stuck up with each other. And we do not want that to happen since what we want is for it to be separated. What I am doing here is to let a side of it to be cooked for 30 seconds. Then we will just fold it so that the side that is still pinkish in color would also be cooked. After we have folded it, we will just let the side that is beneath to be cooked for about 30 to 40 seconds depending on the heat that you are using. Speaking of heat, it is better that we use high heat in this instance. Just here in the process of cooking the ground pork. Once the ground pork turned into brown, we can now adjust the heat into medium. We will just continue to cook it until we have achieved the color that we want in our ground pork and for it to be thoroughly cooked. At this moment, our ground pork or “giniling na baboy” is now ready. Actually, we can now eat it at this moment since it is now cooked. But we still need to season it and add the other ingredients. We will now be adding the bell pepper. What I have done here is that, I have just chopped a small red bell pepper as well as a small green bell pepper. After that, we will just be cooking it here for about 2 minutes. I usually use bell peppers when I am cooking ground pork since I like its aroma and it makes our dish more delicious. And for now, we will be adding the green peas. As what I have stated earlier, what I am using here is a frozen green peas and you can really see it in its appearance. We can already put it in here even if it is still frozen. Aside from this frozen green peas, you may also use “guisantes”. This are the green peas in can in which we will just need remove its water. We will just mix it and continue to cook it for 5 minutes. After 5 minutes, we can now season it. I am just using simple seasonings here. Only ground black pepper and salt. That’s it. But you may also use fish sauce in here if you don’t prefer to use salt. There would be no problem with that. Just make sure to mix it well. We will just continue to cook it for 2 to 3 minutes more. After that, we will just remove the cooking pot from our stove and we just need to let our cooked ground pork to cool down. Because what we will be doing next is to mix the ground pork into the eggs. And if we are going to mix in a hot ground pork, the eggs would be cooked immediately and we don’t want that to happen. We will now prepare the eggs while we are letting the ground pork to cool down. After we have beaten the eggs, we will now place the ground pork in it. That is how simple it is. Just make sure that the ground pork had cooled down already. We will just place it directly into the bowl where the eggs are and we will just mix it thoroughly. We just need to make sure that all the ingredients are well blended. After that, we will go back to our cooking stove since we will be cooking it already. As simple as that. We will just be heating a cooking pan and place a cooking oil in it. We will need to use only a small amount of oil in here. You may also use a cooking oil spray just as what I am using. After that, we will just be scooping the mixture. The secret in here while we scoop a mixture is that, only a small quantity of egg is what we need to get. Meaning, once we have scooped the mixture, we will let the egg to drip so that only a few of it is what we can get. Because once we have placed a ladle of mixture here in the pot and it comes off with quite plenty of egg, the tendency is that egg would spread out here in our cooking pot. As you would notice, it is not that scattered and it is neat. If you would want to add more of the mixture, we will just place it on top and press it down a little. And if you would notice that the egg in the sides are being scattered, what we will just do is to get a spatula and then slowly push it towards the mixture. Just the same as this, we will just push it inwards so that it would be neatly presented. After that, we will just cook the egg or “torta” (omelette) on a medium heat for one to one and a half minute. After that, we will just flipped it over. The reason why I am only cooking one omelette for now is that I want to show you a method on how to flip it over which is the easiest when we are cooking only one omelette. We will just flip it. What we will do is to let the omelette slide into the pan and once it had slid, that means that it is already cooked. By then, we will now flip it. We will just be cooking the opposite side for about the same time of one to one and a half minutes. At this moment, our omelette is now cooked. We will just get it using a spatula and place it into a serving plate. We will just continue to cook the other mixture. To maximize the space of our cooking pan, especially when it is as wide as this, what we will do is to scoop more quantities of it. But as for this instance, we will lessen the amount of mixture in each scoop so that we will have enough room to flip over the omelettes. More likely, only 3 pieces of omelettes is what we will be doing for now. And only a scoop of mixture is what we will be putting. We will just continue to cook it for one to one and a half minute. At this moment, we will be flipping the omelettes one at a time. It is much easier to flip it over when we have a wide working area. Just come to think of it if we have placed 4 or 5 mixtures in here, that would become difficult for us since in every move we make, there is a mixture that is being affected. If there are ground pork or bell pepper separated from our omelette, just place it on top of the omelette that we have not yet flipped over just like this. After that, we will just continue with the flipping of the omelettes. As for me, it is more efficient if we are cooking the omelettes by batches compared to cooking just one of it at a time. It is because, we can easily be finish with this process. And besides, we can also save gas or electricity from it depending on the stove you are using. What we will do now is to continue cooking the remaining mixture. And for the omelettes that we have already cooked, we can now transfer it into a serving plate. Then we can now serve it. This is now our Tortang Giniling (Ground Pork Omelette) Come and let us now taste it. It is now time for us to taste it. But before anything else, there are someone whom I like to greet. This now our Ground Pork Omelette. This is so easy to make most especially if leftover ground pork is what you will be using. Mmm~ It is so delicious. This is what I have immediately tasted, I have tasted the ground pork first. And the seasoning that we have added is of the right amount. What’s important in here is that we will add salt in the ground pork so that when we mix it with the eggs, it won’t be lacking in taste. After that, the taste of the eggs had mixed in with the ground pork which makes it really rich in flavor. I bet that this dish would be perfectly paired with rice in which we will just add banana ketchup in it. It would also be great to be a filling on a sandwich. What I usually do with this is that I toast a bread which is not that overly toasted but of the color of light brown only and I will add mayonaise in it which is Lady’s Choice Mayonaise of course, and then I will put the omelette as a filling which turns out to be delicious.
