and yes I’m totally sitting on my
kitchen floor but I had to share that I’m
sitting here about to enjoy delicious
keto pancakes and these are legit the
easiest keto pancakes you will ever make.
All you need is a blender. Literally, you
put all the ingredients in a blender.
You blend and then you cook your pancakes on
the stove and that is it. Super simple!
So here it goes. Here are the ingredients that
you need to add to your blender and keep
in mind you likely have these items on
hand. They’re pantry staples for keto eaters.
3 eggs, you guys, 3 eggs in that blender.
4 tablespoons, which is a 2 ounce block,
of cream cheese.
2 tablespoons butter. I didn’t even melt my butter.
I just threw it in the blender,
that’s how easy this recipe is.
1 teaspoon pure vanilla extract.
1 cup almond flour. Everyone that I know
that eats keto has almond flour.
1 tablespoon Erythritol or a different alternative sweetener that you love.
1 and 1/4 teaspoon baking powder.
Final ingredient— 1/4 teaspoon salt.
That is it you guys and then you blend.
You blend, blend, blend, blend, blend, and
then the pancakes are ready!
If you have a griddle, more power to you.
I am just using a nonstick pan but that totally works.
Just make sure the heat’s not too
high because you don’t want to burn
those gorgeous pancakes.
So anyway, cook your pancakes 3 to 4 minutes per side.
Just keep checking.
When it’s ready to flip, you’ll be able to put
your spatula underneath and get it
flipped over and then your glorious
pancakes are done, you guys. And then
you’re free to do all these yummy keto toppings.
There’s homemade whipped cream.
There’s slathering of peanut butter.
You could do ice cream. You could do the
low carb melted ice cream on top, that’s amazing too.
Sky’s the limit here, guys. But go enjoy
