keto Chocolate Chip Muffins

– Hey guys, today on
Low Carb with Jennifer, I’m going to make my keto
chocolate chip muffins. They are the delicious,
soft, fluffy, muffin with chocolate chips, and they’re keto, and you can find the full recipe down in the description below, or you can click the
link and go to my website if you want to print the recipe. So, let’s get goin’. – So, this is a super simple recipe. It uses some sweetener,
which I love Lakanto, you could also use Swerve. Some baking powder, or is it baking soda, baking soda, vanilla extract, eggs, Greek yogurt, yes Greek yogurt. And if you wanted, you
could use I guess sour cream or somethin’, it might
taste a little different. But actually, Greek yogurt has
less carbs than sour cream. And then we’ve got some
sugar-free chocolate chips here. I like to use Lily’s Chocolate Chips, you can find them on
Amazon or Thrive Market, Whole Foods sells them. So, we’ve got also, almond flour here. This uses almond flour, which
I’ve been using a lot lately, because coconut flour is just so finicky. We’re going to do all of this in one bowl. We’re going to add in our dry ingredients. So, we’ve got our sweetener, our baking soda, and a pinch of salt. We’re going to stir that up. Now, we’re adding our wet ingredients, and that’s our eggs, and our Greek yogurt, is one cup of Greek yogurt, and there’s three eggs. And now I’ve got some vanilla extract. And that is it, my friends, except for the chocolate chips. But, this is my just standard
almond flour muffin recipe. You could add blueberries if you want. You could add almonds,
which is how I like it, too. And sliced almonds are
good for a little crunch. But these blueberry muffins are delicious. (laughs) These chocolate chip
muffins are delicious. The blueberry would be delicious, too. Okay, we’ve got our smooth batter here. Now, we can add in our chocolate chips. Just going to fold them in. And this is ready to be
scooped into our muffin tin. So, we’ve got a muffin tin
that we’ve lined with liners, and we also sprayed inside the liners because we
don’t want them to stick, and sometimes with keto
baked goods, they stick. So, I’ve also got a muffin
scoop or cookie scoop, or ice cream scoop, whatever
you want to call it. This is a number 16 scoop. Full. I think it’s probably a quarter of a cup. So, I’m just going to scoop these all out. It makes exactly 12 muffins. Okay, these are ready for the oven. These are going to bake
in a 400 degree oven for about 20 minutes. A toothpick will come out
clean when they’re ready. Okay, here are our
muffins, out of the oven. The tops got a little
browner than I would like, maybe because I wasn’t paying attention and they kind of overcooked. But, they’re still gooey, I
mean not gooey, but fluffy. The chocolate chips are gooey. Fluffy and delicious on the inside. Mmmm, those are so good. So, you can find the
