Keto Taco Salad with Chicken and Cheese Crisps!

– Hey, guys, I’m Jennifer. Welcome back to Low Carb with Jennifer. Today, I’m going to be
making my keto taco salad using chicken, and I’ve
got a secret ingredient, because doesn’t a taco salad
need to have a crunchy element? And what do you put in
a taco salad that’s keto that’s crunchy, ah, you know, do you know? I’m going to have to show you later. So stay tuned. I’ll show you all about
that, and I’ll show you how to make this chicken in my air fryer and I’ll tell you how to
make it on the stove top. And we’re going to put this
keto taco salad together, and it’s going to be delicious. (light music) So we’re going to get
started with the chicken. So I’ve got boneless skinless
chicken thighs, four here. And this is a seasoning mixture that we’re going to put on the chicken. It’s cumin, smoked paprika,
salt, chili powder, and garlic powder. So we’re going to mix this up, and we’re going to put it
evenly over the chicken on both sides. This is some very delicious
and flavorful chicken thighs. And I’m going to go ahead and put these in the air fryer basket, (metal clanging)
oops, before I do the other side. I’m just going to lay these in here. Should hold all four, no problem. And these are going to shrink. So if they overlap just
a little bit, it’s fine. (plate clanging) So now we can do the
rest of this seasoning. And we’re going to cook
these in the air fryer about 15 minutes. I might flip them halfway through. We’ll see, I’ll let you know. (air fryer beeping)
So I’m going to do 400. And we’re going to do 15 minutes. Okay, we cooked our
chicken in the air fryer for 20 minutes. And I did flip them halfway through. So we’re going to pull them out of here, and they look amazing. So I’m going to cut these into strips without burning myself. Ooh, these are so juicy. I love the air fryer. You can also pan fry these
with a little avocado oil in a cast iron skillet or any
skillet, it doesn’t matter. So we’re going to start
getting this all assembled. And if you think that
I didn’t wash my tongs after touching the raw chicken, I did. So no need to comment. Thank you. Okay, here are all of our components for our keto chicken salad. We’ve got our chicken. We’ve got some cilantro,
some black olives, some cheese, some salsa, and the secret ingredient,
our secret crunchy ingredient, are these cheese crisps,
cheddar cheese crisps. So get you a bag of these (bag crunching)
and just crunch ’em up in the bag. These are so good. Okay. So now, we can assemble our salad. So if you want, you can make it all pretty and you can do like some cilantro here, some cheese here, whatever. I’m just going to sprinkle it all on top. So put some cheese. Oh, let me put my chicken. Big bunch of chicken. This is going to be so good. This is enough for four people. Perfect dinner. This chicken is so good. You could use it and make all kinds of stuff
with it, quesadillas, fajitas. So now I’m going to add some cilantro. I love cilantro. You can leave it out if you don’t like it. I love it, the more the better. Some olives and now, some
salsa just to give this a little bit of moisture. Oh my gosh, that looks so good. And so now, the secret ingredient, the cheese crisps for some crunch. Oh my gosh, look at that. That looks so amazing. Serve that up into some bowls, and you will have an amazing
dinner for your family. So let me know how much you

    Pork rinds would work well, also. Edited to add, would love the cheese crisps also.
