Korean Spicy Sauce Recipe


Welcome back to another cooking video. I’m
Chef Devaux, and today I’m going to teach you how to make a Korean Spicy Sauce that
you can add to delicious barbecue, grilled food, or deep fried food and it just makes
it so delicious, as long as you like spicy food. If you don’t like spicy food then
this one’s not for you. With nothing more to be said let’s get cooking—let’s
do this! First thing you want to do is take some sesame
seeds and place them into a pan and you want to just toast them for a little bit. Just
bring the heat up and cook them for about 3 to 4 minutes and shake them about like this,
and this will release the essential aromas inside and the oils and just freshen and liven
up the smells and taste of the sesame seeds. Once that’s done you’re going to want
to put this to one side, then you’re going to take your 100 grams of Gochujang Paste,
which is a Korean fermented chili paste. This is awesome stuff. 100 grams of that will make
the base of the sauce and then I’m going to add 26 grams of sugar, followed by 20 grams
of sake, and 20 grams of soya sauce, and then 30 grams of freshly juiced apple juice, 8
grams of garlic, and 6 grams of sesame seeds, the toasted ones I just toasted from the pan.
And last but not least 20 grams of sesame seed oil.
Simply mix this in together with a spoon until the sugar dissolves into the liquid, and that’s
really it. It’s the simplest sauce you can make, as long as you’ve got all the ingredients
you just mix them together and done. It’s that simple. This is just an amazing sauce,
like I said you can add this to a lot of things. There we go, this is how you make that Korean-style
Spicy Sauce. Go ahead, make this at home and put it on everything you can find to eat,
even an apple. No, don’t put it on that, it would be bad.

    Hi I am korean. All is good but one ingredient. Sake is japanese. Not korean. why does he use sake in korean recipe! That is No No! Alcohol is an option not a must. Besides, if we An want to add alcohol, we Koreans have Soju. Tell people to add Korean Soju in korean recipe, not japanese sake!!!

    Your recipe should read, "Korean inspired dipping sauce" because this is in no way an authentic recipe. Apple juice, sake, soy sauce and garlic? My halmonim is turning in her grave. And for those hoping for the spicy ramen sauce, no this isn't it. It's spicy but not hot and firey. It's a sweet/salty/sour dipping sauce for mahndu dumplings, and meat, fish or vegetable fritters. It is also used as a base for bibinpahb, the mixed rice dish or bebinkooksoo, the mixed noodle dish. You can also use it as a base for a dok stew, a rice stick or fishcake stew. You can, I suppose put it on "anything and everything" as he says, but you can also put ketchup on "anything and everything" too. That doesn't mean it's to be done.

    Substitute sugar with brown sugar for an overall flavor. Plus my step Mom would use Korean rice cooking wine instead of sake, sometimes soju and the final thing you could try is apple vinegar (aged if possible). It's a great taste sensation. Cheers & have a champion day.
