Lachha Paratha | Multi Layered Indian Flat Bread | Flaky Layered Paratha


lachha paratha is a north indian multilayered flatbread
ingredients & their quantities are listed in the description box
here they are
maida/all purpose flour
atta/whole wheat flour
sooji/semolina
powdered sugar
salt
desi ghee/clarified butter
we will prepare the dough first
to a bowl or a large mixing dish add the whole wheat flour
maida/all purpose flour
sooji/semolina
salt
sugar
and 1 tbsp of desi ghee/clarified butter
mix the ingredients till well combined
add water little by little and prepare a soft dough
the dough has come together but is sticky. now just wet your hands a few times and knead further till it becomes smooth
the dough is ready & it is as soft as the one we use for making roti
spread some desi ghee on it then cover it & let it rest for 15 minutes
15 minutes later apply some desi ghee to the hands and knead the dough for a minute
divide this dough into 3 equal parts
we wil now roll out the lachha paratha but before that we will clean the rolling surface thoroughly and apply desi ghee on it to prevent the paratha sticking to it
grease your hands as well
take one piece of dough, roll it between the palms & flatten it a little by hand. place it on the rolling surface and roll it out as thin as you can
not to worry if the roti is not completely round but it should be very thin
that done spread the ghee liberally all over it
you can use only butter or a combination of ghee & butter instead
cut the roti into thin strips with a pizza cutter or a knife as shown
then apply some ghee to the knife blade & fold/roll over the strips as shown
once this is done brush desi ghee again on this
grease the hands and roll the paratha as shown and make the peda
shape this dough into a paratha but do not use a rolling pin as this will destroy the lachas or the layers. do this by hand as shown. grease the surface first
the paratha is ready to be roasted. keep a non stick pan to heat up on low medium heat
once the tawa is hot reduce heat to low, spread some ghee on it & place the paratha on it
flip the paratha after 15 seconds and spread some ghee on this side as well
keep flipping the paratha after every 15-20 seconds till it is roasted crisp with brown spots all over on both sides
keep heat on low throughout so that the paratha gets well cooked from the inside as well
the paratha is ready. transfer it to a plate & make the other parathas similarly
you can see how flaky & prominent its layers are

    nice . ACCORDING TO MY VIEW ALL ATTA SHOULD BE USED IN PLACE OF MAIDA . MAIDA IS NOT GOOD FOR HEALTH
