Low Carb Chicken Salad Recipe – Meal Prep Made Easy – Keto Diet

Welcome all! Papa G here. Today I
present my low carbohydrate chicken salad recipe.
This recipe is perfect for those meal
prep Sunday’s when you’re planning your
meals for the week. It makes a great low
carbohydrate lunchtime meal. Let’s get started.
We’ll start by dicing up half of a large peeled
cucumber. Next, we’ll use three stalks of
green onions and dice that in pieces as
well. To add some zest, we’ll dice about a
quarter cup of banana peppers. These
peppers will add a great flavor without
adding much spice. Now set everything
aside and we’ll mix together the sauce
we’ll be using. Begin with a half cup of mayonnaise and
add some reduced sugar ketchup; some
Worcestershire sauce; ground black pepper;
garlic powder; cayenne pepper; a little
bit of hot sauce; and some salt. Now if
this sauce looks familiar, you’re right.
It’s the Creole sauce we made in an
earlier video. This sauce really
complements the ingredients and adds a
great taste to the dish. We’ll assemble
our chicken salad by adding 16 ounces of
shredded cooked chicken. As usual, I like
using a whole rotisserie chicken I
purchased at my local grocer here for
two reasons. One, it gives both white and
dark meat flavors. And two, is simple and
easy. You can’t beat easy. To the chicken,
add the diced cucumbers; green onions; the
banana peppers; and finally our Creole
sauce. Mix to combine. It’s important
here to give a taste for salt and pepper.
Here I add a little more salt and pepper;
about a 1/2 teaspoon of each. Taste
for yourself, and add more or less here
to your own liking.
Mix everything all together. Now we’ll
add a little bit more texture and flavor
with a quarter cup of rough chopped
pecans. Our chicken salad is ready to eat
now, but I like to cover and place in the
refrigerator for at least an hour to
allow all the flavors to come together.
This is a really great tasting recipe
There you have it folks! My low carbohydrate
chicken salad. Pair it with a low carbohydrate
tortilla; my low carbohydrate bread; or wrap it
with some lettuce. Any way you choose, it
makes for a great low carbohydrate meal. I hope
