WE’RE CELEBRATING CITRUS SEASON. AND MARKET DISTRICTS CHRIS THAT WILL CRYSTAL BALD WIN IS HERE TO MAKE A APPRECIATING TREAT IN THE — A FRESHENING TREAT IN THE MIDDLE OF THE WINTER. IT SMELLS AND LOOKS LOVELY. BUT I’M LIKE A LOT OF PEOPLE, CITRUS SEASON. THEY THINK LIGHT AND REFRESHING AND SUMMERTIME. BUT I’M OLD ENOUGH TO REMEMBER THAT YOU WOULD GET AT THIS TIME TRUSS IN THE WINTER. — CITRUS IN THE WINTER. AND THEN WOULD YOU ENJOY IT ALL THE WAY TILL YOU HAD YOUR SUMMER FRUITS COME OUT SO IT IS DEFINITELY A WINTER FREW. AND YOU GET ALL OF THESE GREAT VARIETIES. A WIDE VARIETY THAT YOU CAN DO SO MANY THINGS W AND IT IS NOT JUST PEELING THEM AND EATING THEM. WHAT ARE WE MAKING TODAY? WE’RE GOING TO MAKE LEMON PIE. WE’LL START WITH THAT FIRST. IT TAKES A LITTLE BIT OF TIME. I HAVE FLOWER AND CORN MEAL. THIS IS A SHAKER RECIPE. IT IS REALLY GOOD. IT IS LIKE A JELLY INSIDE THE PIE. AND I’LL TAKE THE EGGS AND BEAT THEM UP A LITTLE BIT. AND I’LL PUT IN A LITTLE BIT OF SUGAR. AND THEN SOME AGOS AND THEN SOME BUTTER MILK. IT EVENS OUT THE THICKNESS A LITTLE BIT. AND THEN A LITTLE BIT OF BUTTER, OF COURSE. I TALK ABOUT MAKING YOUR OWN CRUST, PEOPLE SAY CAN YOU JUST SHOW ONE MADE. AND I PUT A SECOND CRUST ON TOP. AND YOU BAKE IT AT 375 AND IT ENDS UP WITH THAT RIGHT THERE. AND I HAVE A LITTLE SWEETENED WHIP CREAM. OKAY. PERFECT. IT LOOKS DELICIOUS. HOW LONG DOES IT BAKE? ABOUT 40 MINUTES. AND I USUALLY BRUSH A LITTLE BUTTER ON TOP. IT IS REALLY GOOD. IT IS NOT SUPER SWEET. EXACTLY. WHAT IS NEXT? SALMON THIS IS A SALMON SALAD WITH BLOOD ORANGES. THEY’RE BEAUTIFUL AND THEY HAVE A LITTLE TARTNESS TO THEM AS OPPOSED TO A REGULAR LEMON. AND I CUT THEM UP. AND I TAKE THE SALMON FILETS AND I MARINATE IT. WHAT IS IT MARINATED WITH? THE JUICE FROM THE BLOOD ORANGES AND A LITTLE THYME AND A LITTLE ROSEMARY IN HERE. AND IN ABOUT A HALF HOUR, DON’T THEY HAVE FOR A REALLY LONG TIME BECAUSE THE ACID WILL COOK THE SALMON. IF YOU THINK A LITTLE BIT IS GOOD AND MORE IS BETTER THAT IS NOT THE CASE WITH THE FISH. IT WILL CHANGE THE TEXTURE. I START SKIN SIDE DOWN BECAUSE I WILL HAVE THE CRISPINESS ON THE SKIN. THE SKIN SIDE DOWN AND FLIP IT OVER AND COOK IT JUST THROUGH. AND THEN I’LL TAKE THE SALMON AND PLACE IT RIGHT ON TOP. THEREON IS WATER CRESTS. AND YOU CAN USE SOME — AND THEN I MADE A DRESSING. WHAT IS THIS? OLIVE OIL, SHERRY VINEGAR AND THYME AND A LITTLE SALT AND PEPPER. AND THEN I WILL DRIZZLE IT. THIS ONE IS LIGHTER. SO A LOT OF FOLKS ARE LOOKING TO DO SOMETHING A LITTLE LIGHTER FOR THE NEW YEAR. WE HAD A LOT OF HEAVY THROUGH THE HOLIDAYS. SO THIS IS A NICE WAY TO HAVE SOMETHING THAT IS GREAT FOR THIS SEASON AND IT IS FRESH. BUT YOU CAN LIGHTEN UP A LITTLE BIT. DRESSING DOESN’T CHANGE THE FLAVOR OF THE BLOOD ORANGES? NO. I’M GOING TASTE THIS. I’VE DONE THIS WITH DUCK BREASTS SOMETIME. YOU CAN SEER IT OFF. BUT THE FAMILY LOVE IT. AND THAT SALAD? THIS IS A CITRUS SALAD. THESE ARE KARA KARA ORANGES. IN FRONT OF THAT IS A BLOOD ORANGE. I HAVE OF IT LOOK LIKE THAT LIKE GRAPEFRUIT BUT THEY’RE SWEET AND I HAVE NAVAL ORANGES IN THERE. SO THEY’RE A LITTLE TARTER AND THEY ADD A LITTLE MORE FLAVOR AND A LITTLE BIT OF GRAPEFRUIT AND I PUT SOME ROASTED PEPPERS AND A LITTLE BIT OF JALAPEÑO PEPPER. AND MINT AND CILANTRO AND A DRESSING WITH HONEY AND A LITTLE BIT OF MEYER LEMON CUTE IN — JUICE IN THERE. AND THAT WOULD BE GREAT TO GO ALONG WITH A PIECE OF FISH THAT WOULD BE A GREAT THING TOO.
