Namaskar!Welcome to nishamadhulika.com We all enjoy eating stuffed parathas in breakfast. We can make stuffed paranthas of all, cauliflower,fenugreek, palak etc. But today we are going to mix all the vegetables and prepare mixed stuffed paranthas. These paranthas are very tasty. So, let us prepare mixed parathas. To make mix vgetable parathas, first we’ll prepare the dough. Let’s knead the dough. Pour the flour in a big bowl. Now add 1/2 tsp salt, Now add 2 tsp oil. Mix well. Keep adding a little water and prepare a soft dough. Knead the dough for another 2 to 3 minutes so that it becomes extremely soft. Our dough has become soft. We have used less than 1 tbsp water to knead this much dough. Cover the dough and keep it aside for 20 to 25 minutes,the dough will settle. Till the time dough sets, let’s prepare the stuffing. Chop spinach and cauliflower beforehand. The potatoes are already boiled so peel them. Heat the pan. Add 2 tsp oil to the pan. Heat the oil and cut the potatoes into tiny pieces. We have mashed the potatoes. Once the oil is heated, add cumin seeds and asafoetida. Fry them on low flame so that the spices do not burn. Add coriander powder and ginger paste Roast the masala a little. Now add green chili. Add spinach to them. Roast on a little high flame. Now add salt, red chili powder, dried mango powder. Mix everything well and roast. Turn the stove on high flame. Mix everything and roast for 1 to 2 minutes. Do not fry the vegetables too much. Now add potatoes as well. Mix them well. Mash the big potato pieces. You can add garam masala if you like to eat spicy. If you eating less spicy then you can avoid adding red chili powder. Everything is mixed well. Our stuffing is now ready so turn off the flame. Add green corianer leaves and mix. Take out the stuffing in a plate so that it cools down. 20 minutes are over and our dough is set. Apply a little oil on your hands and knead the dough a little more. Our dough is now ready to make the parathas. Take some dry flour to wrap the parathas. So now let’s prepare the paranthas. Turn on the flame. Break a little dough. We can prepare paranthas as per our choice. But today we are going to make medium sized paranthas. Take a small ball of dough just the size of a guava. Roll the dough and make a ball this way. Press it with your hands and make a flat oval. We have prepared a ball. Wrap it around dry flour and roll a disc of 3 to 4 inch approximately. Apply a little oil on the rolled out parantha. Put 2 to 3 tbsp stuffing over the paratha. Do not add too much of stuffing otherwise our parantha will break. Now join the ends of paranthas in such a way that the stuffing does not come. Press it this way using your fingers. So that the stuffing spreads equallu on all sides. Now wrap it in dry flour. Remove the extra dough roll out the parantha. Roll out the paranthas from all sides. Make sure that the parantha is not thin from the centre. We have rolled out the parantha. Suffed paranthas are a little thick. The pan is now hot. Put a little oil on the pan and spread it this way evenly on all sides. Put the parantha over the pan. Till the time paranthas fries, let’s roll another parantha. The parantha appears to be a little dark from the top,this means that our parantha is fried. Now flip the parantha. Fry the paranthas till it becomes brown from the other side as well. Our parantha is fried so we will apply oil and spread it on all sides. Now flip the parantha Apply oil on this side as well and spread it evenly. Fry it in medium flame. Press the parantha this way and fry till it becomes golden brown from both sides. The parantha is golden brown from both sides,put it over a plate. Paranthas taste delicious when served hot. Prepare all the paranthas similarly. Our parantha are now ready. We have prepared 7 paranthas from this much dough. Mix vegetable paranthas are now ready. very tasty and nutritious paranthas are prepared.
