Welcome to Instant Cooking Today I am making Mix Veg Pickle So for this you can use whatever vegetable you like But commonly used vegetables are Carrot, Cauliflower, Ginger, Chilli And beans. So we are using here Diced Carrot, Sliced Ginger Sliced beans, rock salt, Onion Seeds, Dry Mango Powder Cauliflower, garlic, Salt to taste Dry ginger powder, Fenugreek Seeds, Coriander seeds Fennel Seeds, Green Chilli Mustard Seeds So for making Mix Veg Pickle take a fry pan add 4 tsp of Fennel Seeds Add 2 tsp of Coriander seeds 1 tsp of fenugreek seeds 1/2 tsp of Cumin Seeds, 1 tsp of Onion Seeds And on very low flame dry roast them for 1 min Now let them cool down Now put it into a grinder And coarsely grind them Now add 1/2 of Rock Salt Now on the same pan take approximately 8-10 tsp of Mustard Seed Oil Let it hot and then cool down When its Lukewarm then add 1/4 tsp of Asafoetida 1/2 tsp of Turmeric powder 1/2 Red Chilly powder Mix them Then add our dry roasted Masala Mix it well and then add 5 tsp of Mustard Seeds Now add salt to taste So, the base of our pickle is ready Now we have to add the vegetables, Firstly add Cauliflower Coated with the masala then add carrot add beans ginger- Garlic Green chilli And mix them all together then on low flame saute them We don’t need to cook them. We just want that the extra moisture of the vegetable should evaporate so, for 1 min just saute them Now take these vegetables into the glass container And add another 5-7 tsp of mustard Oil And put it into air tight container & your Mix Veg Pickle is ready.

    JUST WHEN DO YOU ADD GINGER POWDER AND AMCHUR? YOU SHOW THOSE INGREDIENTS AND NEVER USE THEM.

    Hello.
    You see we made mixed pickle of carrot, chillies and garlic… It came out well.. but the garlic have somehow turned greenish… can you tell us why? or what could be the reason for this?
    Also we used vinegar in our recipe, but the rest is same as yours..
