Moist and Delicious Banana Nut Muffins – Low Carb Keto Banana Bread

Welcome all! Papa G here. Today I present
one of the best low carbohydrate banana muffins
you’ll ever try. With just under two and
a half net carbohydrates per muffin, and an
incredible balance of texture and taste,
it’s a wonderful way to begin your
morning or end your day. Let’s get
To a large mixing bowl, add one and a
half cups of almond flour; a granulated
sugar substitute equal to one and a half
cups of regular sugar; one teaspoon of
baking powder; just a bit of baking soda;
some salt; two teaspoons of ground
cinnamon; and just a bit of xanthan gum.
Mix with a whisk to combine. Add to the
dry ingredients, two large beaten eggs;
some melted butter; and for a little more
fat, some heavy cream. Mix well until
everything is incorporated. Add 3/4 of a
cup of chopped walnuts and mix that in
as well. Now instead of using real
bananas, we’re gonna use real banana
extract. This will give us the banana
flavor we want without all the carbohydrates.
When everything is mixed together, line
a muffin pan with paper liners and add
the batter to the cups. Using a two spoon
method seems to work best for me. When
the batter has been equally divided, top
the muffins with the remaining walnuts –
just a little on each. Place the muffins
in the middle of a preheated 350°F oven for about 25 to 30 minutes, or until
a toothpick comes out clean. When they’re
done, let cool in the pan for about 5 to
10 minutes; then carefully remove the
muffins and let cool completely out of
the pan.
I’m not kidding when I say these are
truly the best low carbohydrate banana muffins
you’ll ever try. Soft, moist, and simply
delicious. There you have it folks! My
low carbohydrate banana nut muffins. All the
banana bread taste without all the carbohydrates.

    Looks yummy! Who said you can't have banana bread or muffins on keto? That is one thing I miss. I used to make banana-nut bread frequently before I went keto. I never thought of banana extract, what a wonderful idea!

    Just the smell of this baking alone is worth making it! I fed this to my family but didn't tell them it was keto until after they exclaimed how delicious it was. They couldn't believe it. Also I made mine in a loaf pan as I didn't have muffin paper cups and it came out beautifully.

    These smell delicious. I don’t know if we can wait until they cool…lol. I had to modify because I found the infamous ‘someone’ put the empty banana extract bottle back empty so I decreased the artificial sweetener slightly to account for the sweetness of the 1Tbs of zero carb banana syrup shaken in the extract bottle and used in its place. I expect them to probably be a bit sweeter than your recipe and more of a banana essence than true banana flavor. However, if they taste as good as they smell, hubby will be a happy camper.

    Hi Papa. First of all I love your recipes which is why I subbed you. I'm going to try this one as I am a huge banana lover but have been avoiding the actual fruit as we all know they are high sugar and I am watching my carbs. They look fabulously delicious and I didn't realize that banana extract had no carbs. This is good news! Thank you for sharing these awesome recipes!

    I made these today and just NOW took a taste: FANTASTIC TASTE! It is really amazing how these are low carb. I DID use Xylitol because that's what i had on hand and I also poured it in a loaf pan lined with parchment paper because I didn't have cupcake cups so it needed to cook about 50 minutes total but you have upped my meal plans a lot lately…Thank you so much for your recipes Papa G!

    The first time I made these I didn't have cupcake papers so I poured it into a loaf pan; It came out good but you could tell the batter seemed a tad wet and dense…I made these again yesterday using cupcake papers like you show and they came out superb! I'm not sharing these with any of my kids since they don't believe in low carb/ keto living even though their old man has lost over 40 pounds living this way…but then again, what do I know? LOL!
