Paleo Breakfast Granola | Low Carb Breakfast #5

In a large bowl add:
1 cup of mixed nuts, already chopped
Here we’re using cashew nuts,
almonds, and pecan nuts.
1/4 cup of sesame seeds
1/4 cup of sunflower seeds
1/2 cup of unsweetened coconut flakes
2 tablespoons of flaxseed meal
and 1 teaspoon of salt.
Mix everything together and reserve.
Now, in a saucepan add:
1 tablespoon of coconut oil
1 tablespoon of honey
1 teaspoon of ground nutmeg
and 1 tablespoon of ground cinnamon
Stir gently on low heat until
everything melts.
Then turn off the heat and add:
1 tablespoon of vanilla extract
Pour this liquid over the nuts and seeds.
Stir very well to coat all ingredients.
Nham nham nham!
It already smells so good!
Grease a baking tray with some coconut oil and
line it with baking paper.
Then spoon the mix into the tray and
flatten using a spatula.
We’ll bake it in 3 stages.
First, bake for about 12 minutes in a preheated
oven to 165C (330F)
Then take it out of the oven and stir the mix.
Pop it into the oven again for
more 8 to 10 minutes.
Finally, take it out of the oven for the third time.
And add:
1/4 cup of dried fruits
Here we’re using dates.
Stir everything and bake for the
last 4 to 5 minutes.
Remove it from the oven and let it
cool completely.
It should have turned crispy and
dark golden brown.
It’s DONE! 🎉
You can leave out of the fridge for a few days.
But it will last longer if you refrigerate it.
This is great to add as a topping on yoghurt, or
even as a breakfast cereal with milk.

    This is VERY HIGH CARB! so not sure why it's described as low carb?

    Thankyou I think this is going to be great , my go to recipe . I shant bother with another . but I put too much salt in for me. And I prefer to add dried fruit after , it goes hard otherwise. K
