Hello Health nuts today I’ll show you a very
easy super delicious and nutritious recipe for rajma or red kidney bean soup. Rajma or
kidney beans are consumed all over the globe but they are more prevalent in Mexican and
Indian cuisine Kidney beans are a super rich source of proteins and carbohydrates and contain
very less fat Due to its low glycemic index it is excellent for people with high blood
sugar or diabetes. It also lowers the cholesterol level and prevents hypertension. Kidney beans
also help in weight loss by keeping you full for a longer duration Due to its fiber rich
content it is also very low in fat content. To prepare the soup you will need 1 cup kidney
beans soaked in water overnight, one onion roughly sliced. 1 tomato roughly diced, 4-5
cloves of garlic-crushed and 1 inch ginger thinly sliced. Next Next in a pressure cooker
take some olive oil and saute the onions ginger and garlic. Fry these till the onion turns
translucent and fragrant. Next go ahead and add in the diced tomatoes. Sprinkle some salt
so that the tomatoes cook faster. Next add in about ½ tsp red chili powder and 1 tsp
turmeric powder. You can skip the chili powder or add more as per your preference. Keep frying
the spice mix on medium heat till the tomatoes turn a little bit mushy. And then go ahead
and add the soak kidney beans or rajma to your cooker. Saute for a bit and then add
about 3 cups of water And some salt. Now put the pressure cooker lid on and let it cook
for at least 8 whistles. This will take about 20 minutes. Rajma takes a little longer to
cook and get soft as compared to other legumes and beans. After 7 to 8 versus turn off the
gas and let all the steam get released from the pressure cooker. Once the steam is released
open the lid and let it cool for few more minutes. Once it’s cool enough you can transfer
the rajma to your blender and blend it Blended on high speed for about a minute or so. Transfer
the soup back into the cooker and put the flame on. Check the consistency of the soup
and add more water if you like at this point also check for salt. Add salt to taste and
let it come to a boil. Once the soup has come to a boil add some lemon juice and turn off
the flame. And there you have your delicious, super nutritious and easy to make rajma soup
ready. Garnish with some chopped coriander or cilantro and serve. Hope you like this
