Roast Leg of Lamb with Garlic and Rosemary

welcome to Keto meals and recipes dot com,
today we will be making a delicious
easy to prepare, roast leg of lamb with garlic
and rosemary, which requires only a few
basic ingredients, the macronutrient
ratio for this recipe is 1.7 to 1, with
1.8 grams of total carbs per serving,
we begin by preparing the lemon and
butter marinade, in a bowl combine the
butter the lemon juice with the lemon rind
salt and pepper, then microwave for
just 15 seconds to soften the butter
this will make blending the ingredients
much easier, but do not melt the butter completely
stir with a fork until well
blended and set aside
also preheat the oven to 200 degrees
Celsius or 400 degrees Fahrenheit
to your roasting pot place a rack so
that the leg is not resting on the bottom
bottom this will enable the heat to
evenly roast the leg and the drippings to collect
these drippings will be used
to make a sauce for the lamb
you will notice that the leg of lamb has
a thin layer of fat, leave this on
because it adds a lot of flavor in the
roasting process, to stuff the leg with
garlic and rosemary make slits with the
paring knife, where you see the red
not the white areas under the fat, because
the white areas are much tougher to work with
when you insert your knife turn it around a bit to make the hole wide enough for the garlic
into each hole insert a wedge of garlic and a small
bunch of rosemary leaves
cover the entire top and side surface with these
stuffed holes, space the holes about two
inches apart, in some holes I inserted
the garlic first and then added a second
wedge of garlic with rosemary, so that
the garlic and rosemary would peak out
at the top,
I did this in order to flavor the inside
as well as the surface of the lamb, when
you have made and stuffed the holes over
the surface, use a basting brush to coat
the leg with the butter marinade you’ve prepared
repeat the coating until you
have used up all the butter mixture
and you distribute the lemon rind evenly,
place the roasting pot into the
preheated oven and roast uncovered for
20 minutes, then reduce the heat to 180
degrees Celsius or 360 degrees
Fahrenheit and continue roasting for 45
to 60 minutes, the time needed will
depend on the thickness of your leg and
how well-done you like your meat, if
you’re using a meat thermometer the
internal temperature should be in the
range of 65 degrees Celsius or 150
degrees Fahrenheit,
we like the roast on to a medium level
because at the ends the meat is
well-done, and at the very center it’s
medium-rare, therefore everybody gets a
piece done to the way they like it best
when the roast is done removed from the
roasting pot and place on a serving plate
cover it with aluminum foil tent
to keep the outside from drying
in the meanwhile let’s make the sauce, there are
two ways to make the sauce, one is in the oven
and the other is on the stovetop
over very low heat, I will be making my
sauce on the stovetop, to the drippings
that are at the bottom of the pot add
1/2 cup of water, with one tablespoon of
apple cider vinegar, using a spatula
gently scrape the bottom as you stir
continue cooking until about one third
of the liquid has evaporated
then turn off the heat, and pour into
your gravy serving bowl, to present you
can bring the uncut leg to the table, and
cut as you serve, in the same way that
you would carve a turkey, or pre cut the
meat into slices and present just the
sliced meat arranged on a platter, for
extra flavor drizzle 1 to 2 tablespoons
of meat sauce over the cut slices,
the roast leg of lamb will be perfectly
complemented by the mint and parsley
salsa verde, or the Greek inspired tzatziki
