Welcome all! Papa G here. Today is Saucy
Sunday! It’s where we focus primarily on
low carbohydrate recipes for sauces, condiments
and dressings. Most of the videos will be
short and to the point; just something to
help add a little flavor to your low
carbohydrate diet. Let’s get started…
For our recipe this week, I’ll be making a low carbohydrate savory herb sauce. We’ll be using a
spice you may or may not have heard of…
marjoram. It’s similar to oregano, but
it’s just a little bit sweeter. Add some
unsalted butter to a sauce pot on medium
heat. Add a half a cup of vegetable stock
and a little xanthan gum. We’ll season
with some salt; ground black pepper; some
dried thyme; about 1/2 a teaspoon of
marjoram. We’ll spice it up a bit with
some prepared horseradish. Add a little
lemon juice and give that a mix to
incorporate. Now add about 1/2 a cup of
sour cream and give that another mix.
We’ll balance the acidity with a liquid
sugar substitute equal to 2 teaspoons of
regular sugar. Give that a final mix and
let simmer 3 to 5 minutes to allow the
flavors to come together. Serve it warm
over your favorite vegetables. This sauce
will work great with fish or chicken as
well.
