Secret Recipe for Disney Turkey Legs – Keto – LCHF – Learn to BBQ


this is Wiley from learn to BBQ
this week the super simple recipe is
Disney turkey legs actually the leg
would include the thigh and we are only
cooking the lower leg or drumstick
this cook we will need the following a
smoker or a grill set up for indirect
cooking for turkey I like to use Hickory
four large turkey drumsticks six
teaspoons of kosher salt 1 teaspoon of
Prague Powder #1 this is a curing
salt six tablespoons of dark brown sugar
2 cups of distilled water and last
Plowboys Yardbird rub or any rub of your
choice first we need to make the
overnight marinate in a container filled
with 2 cups of distilled water add
kosher salt Prague Powder #1 this
is a curing salt dark brown sugar
and then stir till all contents are
dissolved before handling Turkey please
wash your hands put two turkey
drumsticks into a one gallon ziplock bag
with turkey drumsticks in place add one
cup of marinate to the ziplock bag
remove air from the bag and then fold
around drumsticks
now the next two drumsticks place in
second ziplock bag and repeat the
process
put folded bags into a dish just in case
the bags leak and then put in the
refrigerator for 24 hours 24 hours later
remove turkey drumsticks from bags and
wash completely this is very important
for you need to remove all the marinate
from the drumstick
after washing completely dried the
drumsticks with a paper towel
I like to spray the drumsticks with the
cooking oil this helps hold the rub and
also allows the skin to crisp while
cooking when applying rub make sure you
cover every inch of the drumstick as you
can see using a large casserole dish
makes it a lot easier to apply the rub
it also makes it a lot easier to clean
up now it is off to the smoker or grill
make sure the smoker or grill is
preheated to 325 degrees Fahrenheit
turkey is a lean meat and does not
require low and slow temperatures also
the skin will crisp up at the higher
temperature I like to cook the drumstick
to at least 175 degrees Fahrenheit the
meat will stay moist but will be cooked
all the way through now is the time to
pull these drumsticks off the grill so
let’s see how they came out as I cut
through the drumstick you can see how
the meat has that pink look do to using
the curing salt also the meat is
extremely moist
it also has that unique ham taste that
you get with a Disney turkey leg this
recipe takes a little time but it is
easy to do and results are fantastic if

    For anyone reading my comments thanks for the support also I am back to one video a week now that we are moving into BBQ season. My next one will be out next Friday, April 13th. Wait Friday the 13th no way. My next video will be out Saturday, April 14th and it is going to be Baby Back Ribs that are sous vide for 12 hours and then 1 hour on the smoker. This is also a Keto and LCHF version so no worry about sugar. So now you have no reason not to Subscribe so just do it.

    A little help please. Is the Grinder Himalayan Pink Salt the same thing as the Prague Powder #1? Being disabled with very limited transportation, about all I can do is shop Walmart home delivery, do you think they have the Prague? Thank You

    Would the curing salt ratio be 1tsp per 5 pounds of drumsticks? I bought 30 pounds and the drumsticks average about 2.3 pounds apiece… They are huge!
