Sweet Potato Risotto Meal Prep


hey what is going on y’all and welcome back to the fit man cook kitchen I got an awesome meal prep recipe for you all today that I knew even love so you don’t want to miss this video so the inspiration for today’s dish came when I was one last flight back from Nigeria to the States first time flying British Airways it was like night and day he was like customer service was like really nice like you asked him a question and they were like really polite I wasn’t dragged up a plane like some of the other people have been in recent moved oh and he get free wine on the plane I know some of you are like that’s what you’re supposed to get but I’m not useful nice things so yeah anyway so they brought out this rice dish and I was just thinking dang this would be really good if I could have some risotto right now so I began to write down this recipe and I just had to try it out now I’m only back here in the States for what like three or four more days and then I got to fly right back out to Columbia but I was like nah I need to go and make this dish right away so I tend to have a lot of food cravings just like many of you now some stuff I’ll actually put together and I’ll share and some stuff I don’t share just because I’ll make some of the weirdest concoctions I remember one time I made don’t judge me but I could get a little sweet bell peppers a little mini one and I stuffed them with a mixture of almond butter cottage cheese smoked paprika in big garlic laughing because I know that it sounds disgusting but it’s actually pretty good and I stuffed them and I put them into the oven and bake them into their but I like almost pops they’d be really nice and hot and creamy first off you can thank me for not sharing that stuff out there on the blog because I know that y’all would Massacre me but today’s recipe is kind of one of those like concoctions that I came up with that I just loved from first bite this recipe is so legit that I’m making another version of it in my upcoming cookbook because it was that good that’s micronutrient dense the great post-workout meal or a lighter cleaned-up version of a comfort food recipe now the base recipe is also vegan friendly so just add your own choice of protein I’ll be using for youth though or some patchouli oil which is chicken breast chicken you know pipes from an upcoming Columbia trip will you get it later check it out guys first let’s prep the raw sweet potato by focusing holes in it with the pork then we’re going to bake it in the oven for about 45 minutes at 410 chop up some chicken breasts into small pieces instead of nonstick skillet on medium heat spray it with some olive oil and toss in the chicken pieces we’re going to cook until the outside is no longer pink and there is a slight sear on the chicken once that happened remove the chicken from the skillet add olive oil then saute garlic and red onions for about 2 to 3 minutes and be careful not to burn the garlic add uncooked brown rice to the skillet then pour in veggie or chicken broth bring it to a simmer then cover and cook for about 30 minutes or until the rice is completely cooked next we’re going to add in some baked sweet potato without the skin then add a little coconut milk to make it extra creamy gently stir this creaminess together and season to taste with sea salt and pepper add in more broth and the cooked chicken breasts simmer for another six to eight minutes lastly only if desired what is risotto without peas so let’s add in some frozen peas to the mix and gently fold everything together Smell this creamy goodness then cover and cook one last time for meal prep I added some raw kale and bell pepper to a container then added the risotto on top add a pinch of sea salt and pepper remember to head over to Fit Men Cook .     Looks beautiful brother, adding that Sweet Potato in there is an awesome idea to thicken and add some of that sweetness. Risotto is so good and so flexible. I have been experimenting a lot with barley in place of rice since it is fairly cheap and it is 20% fiber and has better nutritional profile than rice. It is a really delicious grain to use in food and really versatile.
