The Best Cauliflower Cheese | Jamie Oliver


Ok you lovely people, now for a beautiful
comfort food dish, which is undeniably sumptuous and gorgeous and it is, the classic British
dish, which is cauliflower cheese. But I’m gonna’ show you that frozen veg in a dish
like this is just as delicious as fresh, only a lot cheaper. Now on my left is my lovely
Greek sister Georgie. She’s gonna’ be cooking a fresh version of this beautiful grattan,
ok. I’m gonna’ do the frozen, we’re gonna’ have a little taste up at the end, so you’re
cool with that? Yes definitely, lovely. So let’s start with the recipe. First in a pan,
two nobs of butter, just get it in that pan on a medium heat ok. So this is based around
the classic French cream sauce, bechamel sauce. For extra flavour add a bay leaf and two finely
sliced cloves of garlic. Thicken the sauce with two tablespoons of flour. And then all
i’m gonna’ do is add about five hundred mills of milk, bit by bit, you can use a wooden
spoon or a whisk. I’m using five hundred grams of frozen broccoli, let that simmer for twenty
minutes until the broccoli is cooked right through, then give it a good whizz up to create
a delicious creamy broccoli sauce. Get yourself your frozen cauliflower, throw it in, there’s
a kilo there, that’s the equivalent of two heads of cauliflower. Then pour the broccoli
sauce over the frozen florets of cauliflower. Fantastic, can’t have cauliflower cheese without
cheese. Cheddar’s great for this, i’m using about seventy grams. That much bread is gonna’
transform that cauliflower cheese from epic to like super epic ok. Chuck it in a blender
with some rosemary or thyme and a tablespoon of olive oil and blitz. I’m gonna’ go in with
a tablespoon of flaked almonds, it goes really really well with roasted cauliflower. Just
a few seconds, just to break it up, then scatter over this delicious veggie feast. So ladies
and gents, we have an amazing broccoli and cauliflower cheese with crispy bits. Bake
for one hour or until golden and cook through. We know that frozen’s a lot cheaper, but what I want to prove is that it can be just as tasty as fresh. I think it’s time to have a little bit of a taste up. Here’s Georgie’s one. In a nut shell, blooming gorgeous. Now
for the version made with frozen veg for nearly half the price. You loose nothing by using
frozen do you not think? No it’s absolutely delicious. There you have it, The Best Cauliflower
and Broccoli Cheese, all thanks to your freezer.

    I always thought buying frozen would be more expensive? As you pay for the convenience of not having to slice and dice your veggies. Very interesting.. Must try this as it looks so awesome…

    Always good to freeze leftover veggies instead of letting them spoil. It's actually more nutritious than letting them degrade in the fridge as you stop the spoiling process when they are at their freshest. Just can't eat them raw, which is best, unfortunately as they turn mushy when defrosted. Always cook from frozen. 🙂

    just made this tonight ….. heart attack city ………….. used 100 g of cheese 40g of butter full milk …… was amazing/ Good but i can feel my heart saying " you dont want to live past 60 do you ? " its all well good if you have the time to shop / prepare/ in takes 10 min / wash the dishes after / do the extra sports to take the pounds off !!

    Just tried this following the written recipe, then watched the video- somehow it ended up very dry, so I used a whole extra cup of bechamel (I also prefer mine extra cheesy so, seemed like the best idea). Also added in Sage, nutmeg, more garlic and chilli and its AMAZING

    I tried this last night for dinner. It was lovely but lacked the creamy cheesy flavour in the dish that cauliflower cheese usually has. Then it dawned on me, the cheese wasn't added to the sauce. It was placed on top. I'm gonna try it again but put the cheese in the sauce so it's cheesy throughout. I also put a bit of pepper in the sauce and smoked paprika and paprika on the top before the breadcrumbs.

    I do keto cauliflower cheese. Take out the flour and add double cream and add cheese to the sauce. Yumm. I like the broccoli being mixed up in the sauce though as extra nutrition. Will try it.

    Go vegans!!!! We made a plant based vegan mexican lasagna and it was deliscious! We were eating it like it had msg, it was that good! I used coconutoil/cashew cheese, with a taco spiced tomato sauce mixed in every layer: refried beans, corn, and rice with sauteed onions….turned out absolutely delish! With the last layer on top only the cheese..

    Both great recipes but I use single cream instead of milk. Parmesian and cheddar for a super cheesy taste. I don't steam or par cook cauliflower. Bake 60 min covered then 20 min uncovered. It will blow your mind it's that good!.

    Lovely to watch. The recipe is in the oven but no mention of cooking times. I allowed 15 minutes for the cauliflower at 200 degrees and then mixed in the other ingredients for a further 15 minutes.. Cannot wait to eat lunch.

    This was delicious. Jamie, according to your web page, you forgot showing us to add the cheese in the sauce (and so did I). Using gluten free flour and GF bread as substitutes, I also forgot about adding the almonds & garlic, but it still turned out great. Thank you!
