The Best Keto McGriddle Clone – Taste Like The Real Thing – only 4g net carbs

hey there it’s Steve from SeriousKeto
and in this video we are gonna make a totally legit McGriddle but before we do
that if you enjoy low-carb cooking videos product and ingredient reviews as
well as lessons learned from my experiences with the ketogenic lifestyle
and intermittent fasting click that subscribe button down there and while
you’re at it click the little bell next to it so you’re notified whenever I
release a new video there are a handful of things that I sort of consider the
keto holy grail one of them is a corn tortilla I think I’ve hit on a recipe
that’s pretty good at that you can click that link right up there if you want to
check out my corn tortilla the other is the McGriddle now I know there’s a lot
of recipes and videos out there for keto McGriddle but I believe this one truly
nails both the taste and the texture of an actual McGriddle now if I wind up
trying somebody else’s McGriddle recipe and it’s better I will gladly admit to
it but for right now I’m here to tell ya this McGriddle that we’re about to make
is totally legit start with 1/2 a cup of coconut flour 2 tablespoons of psyllium
husk powder 1 teaspoon of baking powder and a dash of cinnamon whisk your dry
ingredients together then add 1/2 cup of log-cabin sugar-free syrup or the
sugar-free syrup of your choice to 1/2 cup of warm water to this we’ll add a teaspoon of maple
flavored stevia and mix to dissolve combine your wet and dry ingredients at
this point I usually start mixing it with my hands you’ll find that as the
coconut flower starts to hydrate that it really comes together sort of similar to
when you’re doing masa tortillas once it sticks together as a ball I wrap it in
some plastic wrap while I heat up my – griddles divide the dough into six parts
and roll them into balls about the size of a golf ball then flatten them out ever so slightly before placing them in
your – griddle this is one of those instances where it really pays to have
two of these at around the two minute mark you’ll notice that they start to
puff up when they do push them back down this will help expand the size of the
buns and you may need to do this again at around the four minute mark when you first take them out of the
griddle they’re a little soft around the edges so it’s good to have a delicate
type of spatula like a fish spatula we’re moving to a wire rack to let them
cool briefly then we’ll play them up bottom sausage
Betty slice of American cheese and one egg and the top now it doesn’t look
exactly like a McGriddle from a McDonald’s commercial but then again
neither does a real McGriddle but let’s see how it tastes now it might be a
little bit biased because I’ve been working on this recipe for a while but
in terms of taste and texture I can’t imagine getting much closer to an actual
McGriddle the only thing that’s missing are those
little chunks of like maple bursts and I haven’t figured out how to do that yet
if I do I will create a follow-up video showing you how to do that and then this
becomes a total McGriddle I guess the one other difference it’s not it’s not
all greasy on the outside so you don’t feel like you need to use a napkin while
you’re eating it but you don’t have to take my word for it we’re gonna have
Connor and Jayden come out and have them take a taste all right guys give it a
try see what you think that’s good just like a McGriddle I love
it hey Colton Colton do you want to make riddle you want to make riddle buddy you
don’t have teeth yet so no McGriddle for you let’s see what courtney and my wife
terry thinks about it what do you think amazing does it taste like a real
McGriddle my girls are like my favorite food
but this you’re not just saying that because you love me right I’m not just
saying that I like that this is a little bit thinner it’s not so you know cuz
then I still get the egg and the cheese and the sausage and it’s not all just
fine it’s delicious what do you think it’s
very good dear I don’t eat my brittle as much but Courtney loves women it’s very
yummy so there it is my McGriddle if you find a better
McGriddle recipe please let me know I’d love to taste it

    Looks amazing! I've not had very many mcgriddles so my input isn't worth much 🤡😁… Just thought about your maple burst comment and wondered if you could really finely mince bacon bits and heat/soak in the maple flavored syrup and/or flavoring to mix in batter? Maybe "candy" the bacon?

    Sorry Steve but Log Cabin sugar free syrup has a lot of bad chemicals in it. You'd be better using REAL maple syrup cuz there is no shit in it LOL Now I'm hungry!! Trans guy Lee, Richmond, VA

    Great recipe and I am going to get the ingredients and give this a try! Your version of the buns looks like it they are much larger than the McDonald's McGriddle. McDonalds now has a "Chicken McGriddle" out now. I am thinking this would be good too. I am pretty sure it is just the same chicken patty they use on the McChicken Sandwich, just put on the McGriddle pancakes. You rocked this one!

    I wonder if you used a dehydrator for the maple syrup????? That would work . The prices of maple syrup dehydrated chucks could be folded in right before you place the dough on the griddle.

    I love your experiments to identify recipes that have both the taste and the texture of the original. To me texture plays as much of a role as taste does. I haven't tried these yet but I have some Lakantao Maple Syrop which I'm going to try and also I don't have maple flavored stevia but I have normal stevia drops and some maple extract. I'll try these and let you know how it works.

    Mix some maple flavoring with softened butter. Cool it to firm back up and then "cut" the butter into the batter before grilling. You'll get your "bursts" of maple flavor.

    I made this as soon as I got home from work. While mixing the ingredients For the dough I was thinking “I think this needs egg whites or some kind of protein binder”, but I stood firm and stuck to your recipe with just using the liquid zero splenda sweetener instead of stevia & some maple extract. I am so glad I stuck to your recipe as it was perfect in taste and texture! I cooked the dough in a mini waffle maker & worked great! I did do some with a little motz cheese on both sides of the dough like a crispy chaffle but like the softer original version for the authentic mcgriddle. Well done!

    So, I was googling trying to find out about those "bursts of maple" you talked about and on Amazon, there is a pancake powder mix that includes "maple morsels". So when they are cooked up, every bite you get these bursts of maple flavor. Sadly I googled sugar-free maple morsels and got nothing.

    Looks like you've nailed it, can't wait to try it!! To make the syrup bursts, try placing small droplets of the syrup/water mixture onto a parchment paper lined tray, and freeze them. At the last minute of forming the dough balls, take a few of them from the freezer, and carefully add them in, just before you put them on the dash griddles 🙂 If the syrup/water mixture isn't quite thick enough, possibly add a VERY small amount of xanthan gum, before freezing 🙂 What do you think? Worth a try?

    The process for syrup bursts, as you say, is freezing the syrup mixture and combining the frozen maple chips in the dough.

    A few years ago I drove cross-country from Oregon to North Carolina. McGriddles made up at least half of my meals. This recipe exceeds the best McGriddle I've ever had! I'm so happy to be able to eat these again! Serious keto props to you!

    Asian soup dumplings are made with the soup as a piece of jelly that is wrapped and cooked. Perhaps gelling the SF maple syrup before incorporating into the dough would cause the flavor burst. The gel would soak into the surrounding dough as it cooked , causing local concentration of maple flavor. The thing to watch out for is to make sure to not overdo the gel, as to keep the stiff dough together.
    Perhaps even tweaking the batter‘s liquid volume to help surround the jelly pieces?

    Or gel the sf maple syrup until thick and soft set and use a squirt bottle to drizzle the dough to get the flavor streaks.

    I use the sugar free syrup as the liquid in my ground flax bread (along with an egg of course).  The maple flavor goes well with flax. It tastes like honey wheat berry bread.

    UPDATE: I made a batch of these again this afternoon for a different video and made a couple discoveries. First, I accidentally divided this recipe into 8 McGriddle buns instead of 6. If you are regularly pushing down on the lid of your Dash, it will still expand to nearly the size of the dash. It won't be quite as big, but that will cut your net carbs down to 4g per serving.

    Second, just for grins I tried this out in a Dash waffle maker, instead of the griddle. It turned out well. The texture changes a bit, but not as much as I thought it might. Feel free to used your mini-waffle maker if you don't want to buy another appliance.
