Turkey K.K. (Kofta-Korma) – By VahChef @ VahRehVah.com


hello namaste salaamwalekum satsriyakaal; welcome back to another session with your VahChef at Vahrehvah.com. Thanksgiving in this week so today me and my team are dedicating a whole day to bring you some fantastic turkey recipes that you can try at home i’m going to teach you to make a great korma dish from turkey like I’ve told you before last time i’ve used nuts but today we are going to make it the way we cook it in south india by using poppy seeds, salt, poppy seeds, chopped tomato, coriander powder, cumin powder, chopped coriander, half a cup of yogurt, chopped onion, since we are going to make turkey koftas in Indian style will still use some cranberries so I’ve got some cranberries we’re going to add to our kofta, mustard seeds, cumin seeds, ginger garlic paste, curry leaf, chopped green chilli, whole garam masala, turmeric, red chilli powder, freshly grated coconut and lastly our turkey meat I have bought lean turkey meat if you remember when I made the turkey burger I added some cream to make it nice soft but for a koftas lean meat is really good with no much fat in it so what we are going to do add some cumin seeds, half of your green chilli, little bit of chili powder, little bit of your coriander powder and very little of cumin powder, add some chopped coriander leaf and mix the mixture whenever you make this kofta mixture you can add any of your favorite spices you don’t have to if you like to add some any other like fennel or any other seeds go ahead and add and suit to your taste ok, add a little bit of salt so what we’re going to do we’re going to make some koftas just wet your hands if they are you know and just make into small koftas which we are going to fry in oil so my last turkey kofta now what we are going to do with this koftas is we’re going to fry them you can actually drop them into your sauce directly but it’s going to give in different kind of texture so now let’s fry our koftas remember one thing you don’t have to cook this koftas really well done because you know we are going to cook them in our kofta sauce so just drop your koftas in a medium hot oil just you can cook the koftas till they are half done because you’re going to cook the koftas again in your gravy and you want your koftas to absorb some of these juices, beautiful so dear friends last time when I made korma I used cashew nuts and I told you you know i’m not using poppy seeds because poppy seeds can be like drinking and driving no i have not gone crazy it is the truth did you know an Indian lady was fired from her job because she turned positive for a drug test and she was shocked she said I don’t even drink alcohol I don’t take any drugs so you know she was fired from the job after fighting for six months a legal battle and finally they concluded that the reason why she was showed up positive on a drug test is because of using too much poppy seeds in her cooking so I always wonder why on Sundays when my mom is to make nice korma with biryani we all used to eat and go happy sleepy to have a nice nap and you wake up you’re like in heaven so they can test positive but to be very frank there is nothing narcotic in this you all I want to tell you is the opium is made from the poppy seed plant so there is some certain qualities which they look for in a drug test and you can test positive so now what we going to do we’re going to put the poppy seeds little bit not too much into a hot pan and then we’re going to saute them little bit because you know if you don’t saute the poppy seeds they they will not grind well in your blender imagine if this was opium do you guys know that khus khus or the poppy seeds are banned entry in countries like Singapore and Oman so guys if you have flying to Singapore don’t pack your poppy seeds and carry them you can get into trouble my poppy seeds are ready I’m going to put them in a blender ok and I’m going to add freshly grated coconut ok and turkey and cranberry so what we are going to do we’re going to add little cranberry into our mixture and then we are going to make it a nice paste ok now our poppy seed cranberry and coconut paste is ready so now let’s make our sauce add some oil into a pan, add whole garam masala, 3 – 4 piece of cardamom, three piece of cloves and cinnamon, add mustard seeds when your mustard splutters add some cumin seeds, add chopped onions, add a teaspoon of salt the salt helps in bringing out the moisture from this onion and cooks onion faster you can add your curry leaves and your chopped green chilli remember cook your onion still they are slightly brown little bit turmeric powder and add one tablespoon of ginger garlic paste just make sure that your ginger garlic paste is nicely cooked because you don’t want raw flavor of ginger garlic paste so once the ginger garlic paste is cooked add your chopped tomatoes lot of times in the kurma we don’t even add tomatoes but for this korma you know I’m adding little tomatoes because you know the meat you know turkey meat i want to give a nice flavor now you can see all these tomatoes are slightly mashed up now you can add around two teaspoons of coriander powder, around one spoon of cumin powder, half a tablespoon of chili powder now add some yogurt now take this mixture and add to your yogurt and other mixture and now make sure you have water handy and add water to this gravy because you know the poppy seeds and everything they will thicken the sauce so add water once it comes to a boil oh what a smell okay once it comes to a boil put a lid and cook it for 5 – 10 minutes in a medium flame you want this poppy seed mixture to cook very nicely so that all the raw flavor is gone and a nice poppy gravy comes out now you can see after around 10 minutes the gravy is almost ready now once the gravy is ready you can add your koftas to the mixture now our beautiful koftas are cooked in the sauce for another few more minutes let me check the test ah now friends let me tell you something turkey needs some zing sometimes because of the nature of its meat it tend to get dr and cooked and when it is made into your korma and especially with this poppy seeds it tastes heavenly. Kofta curry nice sauce ha ha ha this is the smell back home this is awesome and for all those my friends from Singapore and Muscat who are watching this show I feel very sad for you because you don’t know what you’re missing get some poppy seeds wow this is really really heavy if they have to ban the most tastiest dish I am sure this Turkey KK will qualify for it wow so friends any query not as khus khus, coconut with a nice yogurt creamy sauce is awesome and Thanksgiving with nice turkey KK is is the best thing you can do and also remember that vahrehvah is all about inspiring others to cook so please post your recipes and cooking tips at vahrehvah.com so others may benefit from your great cooking thank you.

    must be very sour with the cranberry…I have neer been able to cook well with cous-cous….it just stays very raw…

    Poppy seeds contain natural levels of opium. You can get this from just eating a bagel.
