Hello friends. When I started my youtube channel, my first video was chicken biryani recipe. Which you all liked, and appreciated. And many requested for the veg biryani recipe. That is why, today I am going to make veg biryani. Hope you will like it. So lets start. To make beg biryani you will need, 300 grams basmati rice, 250 grams curd, 200 gram oil, a little orange food color, 3 teaspoon desi ghee, Some spices.. 1 teaspoon masala salt, 1/2 teaspoon red chili powder, 1/2 teaspoon turmeric powder, 1 teaspoon salt, 1/2 teaspoon coriander powder, 1 teaspoon ginger garlic paste, 10-15 cashews (optional). Some vegetables.. 100 grams frozen peas, 2 finely chopped tomatoes, 200 grams cottage cheese (cut in cube shape), (optional), 150 grams cauliflower cut in big pieces, 2 long sliced carrots, 2 long sliced potatoes, 3-4 long sliced fras beans. Some kdae spices.. 1 teaspoon cumin seeds, 4 cloves, 4 green cardamom, 1 cinnamon, 3 bay leaves. 2 long sliced green chili, Some fresh coriander, some mint leaves. Here, we have onions sliced differently. 2 long sliced onions, (to be fried) 2 small sliced onions. Lets turn on the gas, and add 2-3 teaspoon refined oil. And heat it. Now, we will add 2 bayleaves, 1/2 teaspoon cumin seeds, 2 cloves, and 2 green cardamom, and roast it. when the cumin seeds are roasted, we will add previously soaked rice carefully. Fry it for 1-2 minutes. Now we will add three times water to rice in the pan, and mix. Now, we will add 1 teaspoon salt, and mix. When the water starts boiling, we will cover it, and boil it about 75 %. We will fry the onions till the rice boils. Lets turn on the gas, and add 4-5 teaspoon refined oil. Add the long sliced onions. We will keep stirring, and let them turn golden brown. Turn off the gas, and take them out on a tissue paper. Friends, we will add 2-3 teaspoon oil in the oil left from frying the onions, and turn on the gas. and heat the oil. add 1 teaspoon cumin seeds, 4 cloves, 2 green cardamom, 1 cinnamon, and 2 bay leaves, and roast them. When the spices are roasted, we will add small sliced onions. And fry them while stirring. Now, we will add ginger garlic paste, and mix. We do not have to turn the onions golden brown, and just fry them this much. Now, we will add the vegetables. Add potato, Cauliflower, Carrots, and beans. And mix them all. Friends, here I have sliced the vegetables long, so that they are visible in the biryani, and give their taste. When the vegetables starts to get done, we will add peas, and tomato, and mix. You can add your favorite vegetables, and fry them for 1-2 minutes. Now, lets add the spices. 1/2 teaspoon turmeric powder,  1/2 teaspoon coriander powder,  1 teaspoon garam masala, 1/2 teaspoon red chili powder. and mix them well. Add 1/2 teaspoon salt, and mix. Add green chili, and mix. Now, we will add fresh curd, and mix. We will fry it while stirring to stop it from getting bad. After frying for 1-2 minutes, we will add cottage cheese, and mix carefully. Add cashews, and green coriander, and mix. Sim the gas. spices are giving a nice smell. Now, we will let it cook for 5 minutes while covered. After 5 minutes, remove the lid and check. The vegetables are 75% cooked. We will break the potato and check. We have to cook them just enough. We will add the drained boiled rice in the vegetables. We have cooked both the vegetables, and rice only 75%. Spread the rice on top. We will add orange food color, in which we have mixed 2 teaspoons of milk. We will sprinkle the food color to get orange color to the rice. Here, we will add essence to the biryani to give a nice fragrance to it. Now, we will ad fresh coriander, mint leaves, and fried onions to it. These are the same onions that we fried earlier. Now, we will add desi ghee all around it. Now, we will cover it and cook it for 8 minutes on sim gas. 8 minutes have passed. We will leave it as it is in steam for 5 minutes. after 5 minutes, we will remove the lid and check. See, the colorful biryani is ready with mouth watering fragrance. You can see, the vegetables, and rice are properly cooked. Each rice is separate. Lets serve. Garnish it with fried onions, and mint leaves. Try it at your home. You will like it.
